View Full Version : Healthy Pressure Cooker recipes

I have a feeling that my pressure cooker could be a great tool for those afternoons when I need dinner inspiration - fast - but my cookbooks don't have very many "mainstream' options that I think my finicky eaters will try. Any suggestions? (Please don't mention oxtails... http://www.cookinglight.com/bbs/smile.gif )

Lorna Sass has several cookbooks for pressure cookers. I have Recipes from an Ecological Kitchen. I'd highly recommend it if you're looking for healthy, vegetarian recipes (I'm not sure if that would fit under your definition of "mainstream"). It's also full of tips on how to cook grains, beans, veggies, etc. in the pressure cooker.

In the April 2000 issue of CL (pg. 174), there is an article "Supper Under Pressure", with recipes for:
*Savory Braised Pork Supper
*Barbecue Brisket Sandwiches
*Osso Buco
*Tuscan Lamb Shanks
*New Mexican Pork Chili (<Beans http://www.cookinglight.com/bbs/smile.gif)
*Beef Bourguignonne

I do all of my risottos in the preasure cooker. I too would recomend Lorna Sass -- I was buying cook books yesterday at Half.com and noticed that they had The Pressured Cook -- which I believe is her only non-vegetarian pressure cook book -- all her recipes are very healthy.

Thanks for the ideas, everyone! I have Lorna Sass's book, and have found some good ones in there, but was still looking for more inspiration. I'll keep trying new recipes...

I love the Lorna Sass books and have checked them out of the library as I am not "wealthy" enough to pay full price for her books. They are NEVER in stock on half.com, nor have I ever found them on sale.

I would like to recommend The Ultimate Pressure Cooker Cookbook by Daniella B. Chace & Maureen B. Keane. They have some wonderful recipes in it - very healthy, many "mediterranean influenced" recipes. My copy is very worn. They have updated the book since I have gotten mine.
