Hey everyone.... just wanted to share a couple of recipes that I had tried in the last few days. Last night I made the Herb Baked Eggs from Barefoot in Paris - DH and I LOVED them - SOOOO simple and really tasty. I used half and half instead of the heavy cream (and may try it with 1% milk next time) but other than that stayed true to the recipe. It's a great simple meal and really tasty... here is the recipe:
Herbed - Baked Eggs
1/4 teaspoon minced fresh garlic
1/4 teaspoon minced fresh thyme leaves
1/4 teaspoon minced fresh rosemary leaves
1 tablespoon minced fresh parsley
1 tablespoon freshly grated Parmesan
6 extra-large eggs
2 tablespoons heavy cream
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
Toasted French bread or brioche, for serving
Preheat the broiler for 5 minutes and place the oven rack 6 inches below the heat.
Combine the garlic, thyme, rosemary, parsley, and Parmesan and set aside. Carefully crack 3 eggs into each of 2 small bowls or teacups (you won't be baking them in these) without breaking the yolks. (It's very important to have all the eggs ready to go before you start cooking.)
Place 2 individual gratin dishes on a baking sheet. Place 1 tablespoon of cream and 1/2 tablespoon of butter in each dish and place under the broiler for about 3 minutes, until hot and bubbly. Quickly, but carefully, pour 3 eggs into each gratin dish and sprinkle evenly with the herb mixture, then sprinkle liberally with salt and pepper. Place back under the broiler for 5 to 6 minutes, until the whites of the eggs are almost cooked. (Rotate the baking sheet once if they aren't cooking evenly.) The eggs will continue to cook after you take them out of the oven. Allow to set for 60 seconds and serve hot with toasted bread.
The other dish I made was from Good Deal with Dave Lieberman. It was a Farmer's Cheese with Raisins and Honey. So simple and absolutely delicious. We had it as a snack with some warm bread. It was a great snack (having the leftovers now for lunch), great taste and like I said really easy. Here is that recipe:
Warm cheese is a comfort food if ever there was one. If it hadn't occurred to you, just think of Mac and Cheese and you should be on the same page with me.
Farmer's Cheese
1/2 cup toasted walnuts
1 pound farmer's cheese
2 tablespoons honey
1/2 cup raisins
A couple dashes cinnamon
A couple pinches salt
Crackers or bread, for serving
Preheat oven 400 degrees F.
Lay walnuts on baking sheet. Roast and shake once or twice to insure even toasting. Roast until a shade darker and aromatic, about 15 minutes.
Remove walnuts and set aside to cool.
Turn the oven to broil.
Place farmer's cheese in large mixing bowl. Add the remaining ingredients and the toasted walnuts. Mix thoroughly. Transfer mixture to a small baking dish (aluminum disposable is fine).
Place under broiler until brown and bubbly on top, about 2 to 3 minutes.
Serve hot or at room temperature with crackers of any kind or slices of crusty bread.
