We have a peanut butter cookie lover coming for the weekend. Anyone have a great recipe that is also light? TIA http://www.cookinglight.com/bbs/smile.gif

I don't and actually, I wanted to warn you that the light PB cookie recipe in the Complete CL cookbook isn't very good, IMHO.

Long ago, in the May/June 1991 CL issue, there was a recipe called "Peanut Butter Cookie Bites." I've never tried it, but the picture portrays them the size and shape of marbles. I'm sure you could make them bigger if you wanted.

3/4 c. sugar
1/3 c. peanut butter
1/4 c. butter or margarine, softened
2 egg whites
1/2 tsp. vanilla extract
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt

Combine first 3 ingredeints in a large bowl; beat at medium speed of an electric mixer until light and fluffy. Add next two ingredioents and beat well. Combine the remaining ingredients separately, and gradually add to the creamed mixture, stirring until well blended. Cover and chill one hour Shape dough into 48 balls. Place 2 inches apart on cookie sheets coated with nonstick spray. Bake at 375 degrees for 10 minutes or until lightly browned. Remove from pans; cool on racks. Store airtight. Yield: 48 (48 calories each, 2 g. fat, 36% calories from fat)

This one actually has added chocolate chips and raisins! I'm sure both are optional, but this version still has only 30% of its calories from fat. I got it from Beatrice Ojakangas's "Light & Easy Baking." I haven't tried it either, but it is lowfat.

1/4 c. unsalted butter, room temp.
1/4 c. nonfat sour cream
1/4 c. peanut butter, creamy or chunky
3/4 c. packed brown sugar
1 large egg, lightly beaten
1 c. whole wheat flour
1 c. all-purpose flour
1/4 c. toasted wheat germ
1 tsp. baking soda
1/2 tsp. salt
1/2 c. semisweet chocolate chips
1 cup dark raisins

Heat oven to 350 degrees and cover 2 cookie sheets with parchment paper. Cream first 4 ingredients in a large mixing bowl until smooth. Stir in egg. In a medium bowl, stir the next 5 ingredients together. Stir dry ingredients into creamed mixture until a dough is formed. Mix in the chocolate chips and raisins. Drop by rounded teaspoons about 1 1/2 inches apart on the prepared baking sheets. Bake at 350 10 minutes or until lightly browned and firm to the touch. Do not overbake. Yield: 60 (57 calories each, 2 g. fat, 30% calories from fat)

By the way, on a side note, Beatrice Ojakangas's "Light & Easy Baking" is a fabulous cookbook where I have found wonderful low fat recipes for cookies as well as many breads and breakfast treats.

Thanks AD - that first recipe looks so easy too! I appreciate the heads-up from donley too - might very well have tried the recipe from the complete cookbook if no one had posted one. Interesting rice krispies idea too but our friend is more a "cookie-cookie" (as opposed to "airy-cookie I guess) gal.

The only thing I can think of was a recipe similar to rice krispie treats but with peanut butter. I thought it was really good. The only problem is that it said to melt and drizzle peanut butter chips over them, and I couldn't get them to a drizzle-like consistency. I'd use chocolate chips instead!
