View Full Version : Need a side for Salmon Baked in Foil

I looked at the thread started last week by betsypenn on Everyday Italian by Giada & that made me check this book out of the library. I have all the ingredients for this... but not sure what to serve as a side. Betsy had the lemon spaghetti... but that's not hitting the spot for me. Maybe simple smashed potatoes? What would you, or have you used as a starch to go w/ this?

So many of the recipes in this book look really good.....except that I am having a heck of a time seeing them! What is it with these book designers that use white type reversed out of pale blue? Or lime green on white? And what is wrong w/ black type on a white page.... why did they have to change it to grey??? I will not buy a book that causes eye strain!!

OK. Rant over.

I just did a simple herbed basmati rice and a side of roasted asparagus. Really nice dinner!

Rosalie: That sounds more like it. Do you have a particular recipe you use... or do you wing it.

I do have a recipe, but I can't seem to find it...I thought it was in my computer files.

Basically it's some cooked, diced onion....add to rice with chicken broth, let cook down. Add chopped basil, parsley and any other herb you like.

Sorry...I'm running out the door, but I'll look for it later!

I love either broccoli or spinach with salmon and usually make a sweet potato. Sometimes if I'm in a hurry, canned corn is the starchy side :p .

I've also made bok choy and rice, potato gratin with asparagus, coleslaw and beans during the summer or steamed carrots and green beans.

Thanks for the ideas. I never have a problem w/ grilled or broiled salmon sides. It was just this herb-y w/ tomato that threw me off. I think I'll do the rice tonight like rosalie did.

Just here to say I tried the salmon wrapped in foil tonight and WE LOVED IT!
I served it with my own stuffed zuchinni.
