I can't find it anywhere in my area, even "gourmet" shops. It's an ingredient in the Oven Roasted Sea Bass w/ Warm Tomato Vinaigrette.

Where have you been able to find it? Can I substitute another type of vinegar?

I too, had a heck of a time finding this, and I live in Chicago where we have EVERYTHING!! I finally found it at a Whole Foods Market (but NOT at the first one I visited! I had to go to another bigger one in the city to find it!) It's a big bottle, and CL says to keep it at room temperature, so I figure it will last a good long time. Maybe Williams-Sonoma has it, or maybe there's an on-line source for it. Good luck.

Susan,

I found mine in Madrid- a little shop a stone's throw from the Prado. I'd love to show you!

I know, I know- Julie, you're not helping, get back to work... http://www.cookinglight.com/bbs/biggrin.gif

According to Cook's Thesaurus, you can substitute it with Balsamic Vinegar.

I've substituted white wine vinegar in the past without problems. If it's an Asian dish, I believe I read once that rice or rice wine vinegar is an acceptable substitute.

When I made this the other night, I improvised by using a little red wine vinegar, a few drops of vanilla (can be used as a sub for sherry) and a little bit of white wine......it turned out great!!

I used champagne vinegar to make the Sea Bass recipe because that was what I had on hand. It was wonderful... Haven't been able to find sherry vinegar either.
