CL Jan/Feb. I just renewed my membership, received my issue yesterday and this was the first recipe I made. These are fabulous muffins, just perfect for breakfast. They are not too sweet and the whole wheat flour, and dried fruit additions make them very filling. I only had to make one change, I did not have wheat bran so I subbed oat bran. Definitely a repeat recipe.

I'm not on my home computer so if anyone wants the recipe I will post back later.

I agree - these were very good. I blogged about them, but forgot to come here and leave a review.

I'd love to try these with fresh fruit too - using the basic recipe as a base for blueberry or cranberry muffins.

Whole Wheat Oatmeal and Raisin Muffins

1 Cup Whole Wheat Flour
1/4 Cup Granulated Sugar
1/4 Cup Packed Brown Sugar
2 Tablespoons Wheat Germ
2 Tablespoons Oat Bran (Original recipe called for wheat bran)
1 1/2 Teaspoons Baking Soda
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Kosher Salt
1 1/2 Cups Quick Cooking Oats
1/3 Cup Chopped Dates
1/3 Cup Raisins
1/3 Cup Dried Cranberries
1 Cup Low Fat Buttermilk
1/4 Cup Canola Oil
1 Large Egg
1/2 Cup Boiling Water

1.Preheat oven to 375 F.

2.Combine flour, granulated sugar, brown sugar, wheat germ, oat bran, baking soda, cinnamon, and salt. Stir with a whisk.

3.Stir in oats, dates, raisins, and cranberries. Make a well in the center.

4.Combine milk and vinegar, let sit for 5 minutes. Combine milk mixture, oil, vanilla, and egg; add to flour mixture, and stir to just combine.

5.Stir in boiling water and let rest for 15 minutes.

6.Bake for 20 minutes.
