Spinach and Strawberry Salad (from 5/01)

I just finished making (and devouring) this light salad. It is wonderful! The dressing is colorful and tart, and the feta cheese adds just enough richness. It's just right to help combat the Texas humidity.

I liked this salad alot too. The dressing was great.

We made this at my May CL Supper Club Dinner and it received mixed reviews. Some thought the dressing was too tart and thick. Personally, I thought it was good but have made several other CL Spinach and Strawberry salad recipes that I like better.
