Spiced Pork-and-Red Pepper Skewers with Meteoric Mango Sauce

Make the sauce in advance; cover and chill. The skewers can be assembled a day in advance and put on the grill just before serving.
1 cup cubed peeled ripe mango
2 tablespoons fresh orange juice
1 teaspoon fresh lime juice
1/4 teaspoon salt
1 small garlic clove, minced
1 tablespoon chopped green onion tops
1 tablespoon finely chopped fresh basil
1 teaspoon finely chopped jalapeņo pepper
1 (1-pound) pork tenderloin
32 (3/4-inch) pieces red bell pepper (about 1 large)
2 teaspoons olive oil
2 teaspoons Old Bay seasoning
Cooking spray
1. Place first 5 ingredients in a food processor or blender; process until smooth. Spoon into a bowl; stir in onions, basil, and jalapeņo. Cover mixture, and chill.

2. Preheat oven to 450 degrees.

3. Trim fat from pork; cut into 32 (3/4-inch) cubes. Place pork and bell pepper in a medium bowl. Drizzle with oil, and sprinkle with seasoning, tossing well to coat. Thread 1 bell pepper piece and 1 pork cube onto each of 32 (6-inch) skewers. Place kebabs on a broiler pan coated with cooking spray; bake at 450 degrees for 10 minutes or until pork is done. Serve kebabs with mango sauce. Yield: 8 servings (serving size: 4 kebabs and 4 teaspoons sauce).

My printer is working!!! I have some ripe mangos to use up and lots of pork tenderloin in the freezer. I think I will give this one a try. Thanks for the recipe! Have you made it yourself? If so, were you pleased?

No Peggy I have not made it yet but just saw it and sounds quite good! I will get pork & try it too...

Do you remember anything more about the dish? Was it very sweet? Did the spices (cloves etc) come through well? Complex or fairly simple?

Just my curiosity getting the best of me. We all have such different tastes, and sometimes a more in depth description helps me to decide whether or not to make a recipe.

How funny! I got a great deal on pork tenderloins also and since CL seems to use just one per recipe, I opened them up and froze them in individual packages.

We also liked the grilled pork tenderloin from May '01. I'm glad to hear the Pork and Bell Pepper Tacos are good. How lucky that CL has an entire article on pork tenderloin recipes this month. Such good timing!!!

Sorry I was so vague, but it was a year ago http://www.cookinglight.com/bbs/smile.gif I remember it being somewhat tangy and not hot-spicy at all. The sauce is sweet and I think I just put a little bit on mine. I was new to mango at the time (now I am a total mango addict).
I think we put the skewers on the grill instead of in the oven.
I hope that helps--I don't remember anything else except that I had just received a packet of Old Bay seasoning in the mail (some kind of promotion).

I had a few pork tenderloins in the freezer too (buy one, get one free...) and since there's just two of us it's tough to eat them up. I made two recent recipes that were outstanding - the grilled pork tenderloin from May, and the Pork and Pepper fahitas(or tacos, I don't remember what they called them)from June. They were both outstanding, but we liked to pork and pepper fahitas best - I cut the pork and marinated it in the spice and oil overnight, it was so easy to put together after work Monday.
Great ways to use up pork - they've got a couple more I want to try, especially the one with tomatillos.
