Quesadilla Salads - June

For those of you that have made any of the quesadilla salads, did you use iceberg lettuce or try another type of lettuce. I don't usually buy iceberg. There must be a reason CL specified iceberg? Thanks.

I used Romaine and the recipe I tried (black bean quesidilla). I think that iceberg would have been a more traditional choice, but I never buy it.

I don't usually use iceberg either, but I've used both iceberg and a baby greens mixture and I must say I like the iceberg better for this simply because it's crisper than other lettuces. Make sure your lettuce is fresh and crisp.

Thanks. I guess I'll get iceberg. It's on sale this week. These sure sound good. At least we'll have a yummy way to use up iceberg.

I normally don't buy iceberg lettuce but I did for the Black Bean Quesidilla salad recipe. Sometimes you just need that crispy style of lettuce and I think that this is one of those times.

P.S. The dressing in this recipe was good too, but I thought it needed a little honey to mellow it out...just MHO.
