I'm from Australia and want to save the chestnuts in season here now to use for Thanksgiving in November. Can I freeze them? Should I cook them first? Any suggestions?
I'd be grateful for any suggestions.

I've tried freezing them before (in the shells, in hopes of keeping the worms away). It really changed their texture. I don't remember in what way but so much so that I didn't want to eat them. Mind you, I only eat them raw so I'm not sure how that would work out if you were planning to cook them.

I imagine they will freeze better cooked. Would it be too much work to do a small trial batch to see how those survive a freeze?

Grandma always told me that freezing nuts makes them gummy. Grandpa always laughed when she said that, and it took me getting older to figure out why! http://www.cookinglight.com/bbs/wink.gif
