View Full Version : ISO: Easy Non Chocolate Dessert for Super Bowl Party

Hey y'all,
I am invited for a Super Bowl Party and I would like to bring some dessert. First I thought about making Brownies, the I thought about making some Chocolate Cake till it hit me: It can't be with Chocolate because my Friend just had a baby and the little one somehow can not handle Chocolate :(
Any Ideas? Something easy and especially easy to eat would be neat. I thought about making individual cheesecakes but I think that's gonna be a lot of work.
There must be any dessert out there which does not contain chocolate.... or?

The first thing that came to mind is CL Spice Pound Cake. I really like the flavors in here. As a chocoholic, it is hard to come up with 'other' desserts. ;)
The second thing that popped in my mind was lemon bars.
I am sure the cooks on this board will have lots of great ideas!

The Cinnamon Apple Cake is always a hit at my house and I know it has received many good reviews on the board.
Cinnamon-Apple Cake
The cream cheese in the batter give this cake lots of moisture. Because it's so tender, use a serrated knife for cutting.
1 3/4 cups sugar, divided
3/4 cup (6 ounces) block-style fat-free cream cheese, softened
1/2 cup butter or stick margarine, softened
1 teaspoon vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
3 cups chopped peeled Rome apple (about 2 large)
Cooking spray
Preheat oven to 350°.
Beat 1 1/2 cups sugar, cream cheese, butter, and vanilla at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition; set aside.
Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking powder, and salt. Add flour mixture to creamed mixture, and beat at low speed until blended. Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons of the cinnamon mixture and apple in a bowl; stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.
Bake at 350° for 1 hour and 15 minutes or until cake pulls away from the sides of pan. Cool cake completely on a wire rack, and cut using a serrated knife.
Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the baking time by 5 minutes.

One more thing.... considering my name on this BB is Applecrisp. What about a warm applecrisp served with vanilla icecream. You can make it in individual servings.

1 cup flour
2 tablespoons sugar
1/16 teaspoon salt
5 1/4 tablespoons butter
2 eggs -- beaten
1/2 cup almonds -- chopped
1 cup light brown sugar -- firmly packed
1 1/2 cups sweetened flaked coconut
3/4 cup powdered sugar
1 tablespoon fresh lime juice
1 teaspoon lime zest
Preheat oven to 350 degrees F.
Combine flour, sugar, and salt in a bowl. Cut in margarine until mixture resembles coarse meal. Press crust into ungreased 10 by 15-inch baking pan. Bake for 15 minutes or until golden brown.
Mix eggs, nuts, brown sugar, and coconut until well blended; spread over baked crust.
Bake an additional 30 minutes or until set.
While still warm, loosen the edges with a metal spatula. Mix together the powdered sugar, lime juice, and zest with a fork. Working quickly, spread the lime paste all over the top with a spatula while still warm. Let cool to room temperature and cut into bars.

NOTES : EXCELLENT. Best dessert I have made in a long time. WAY better tham a typical lemon or lime bar. I halved the recipe and put it in a 9x9. Takes less time to bake. I doubled the glaze. perfect amount if you use double what is called for. I left out the almonds.

How about some cut-out cookies? You could do them in the shape of footballs. I'm in Buffalo Bills country, so I make Buffalo-shaped cookies for football parties. I'm not sure what a Seahawk or Steeler would look like!
Or you could do half moon cookies. Instead of frosting them with chocolate and white icings, you could just do vanilla and tint it the team colors (although I'm not sure what those colors are).

Along the same line as brownies, how about these bars? Very easy to put together, makes a lot, and they are delicious! (Taste something like a PayDay candy bar.) I think they would be great for a superbowl party!

SALTED NUT BARS
Heat oven to 350
Blend the following ingredients:
3 cups flour
1 1/2 cups brown sugar
1 tsp. salt
1 cup butter or margarine, melted
Press into an ungreased 15 X 10 pan. Bake 10 - 12 minutes.
Sprinkle 3 cups of mixed nuts or salted peanuts over partially baked crust.
In small saucepan combine:
1/2 cup corn syrup
2 Tbsp margarine
1 Tbsp water
6 oz. butterscotch chips
Bring to a boil and boil 2 minutes, stirring constantly. (don't overboil, a little less is better than over doing it). Pour cooked mixture over nuts. Bake 10 - 12 minutes.
I find these are easier to cut if I line the pan in aluminum foil. I can lift them out of the pan whole, and put the on my cutting board to cut with a long knife. These are great. I hve never made them with peanuts. I always use the deluxe nuts - without any peanuts at all.

This recipe is as easy as it gets and it looks impressive (tastes great too!):
Thin French Apple Tart
Use a paring knife to prepare the apples for this simple dessert.
1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
1/4 cup sugar
1/2 teaspoon ground cinnamon
2 pounds Golden Delicious apples, peeled, cored, and thinly sliced
2 1/2 tablespoons honey
1/2 teaspoon vanilla extract
Preheat oven to 425°.
Place dough on a lightly floured surface; roll into a 12-inch circle. Place on a 12-inch pizza pan. Combine sugar and cinnamon. Sprinkle 1 tablespoon sugar mixture over dough. Arrange apple slices spokelike on top of dough, working from outside edge of dough to the center. Sprinkle apple slices with remaining sugar mixture. Bake at 425° for 30 minutes.
Combine honey and vanilla in a microwave-safe bowl. Microwave at high 40 seconds. Brush honey mixture over warm tart. Serve warm.
Yield: 8 servings (serving size: 1 wedge)

I just made these last night to try out before making them to take to a Groundhog's Day party on Saturday. They turned out great. I was looking for something that people could just pick up and eat and not need a fork and knife or even a plate. I used Lite Cool Whip in the filling.

CREAM PUFFS - makes about a dozen large or 2 dozen small
(Can substitute ice cream for pudding filling)
INGREDIENTS:
1 package vanilla pudding & pie filling mix
1 cups heavy cream (OR use 8 oz. Cool Whip)
1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
DIRECTIONS:
1. Cook pudding per package directions. Cover and refrigerate to set. When chilled, whip heavy cream & fold in. OR fold in Cool Whip.
2. Preheat oven to 425 degrees F (220 degrees C).
3. In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer or food processor, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet 2 inches apart. (For mini-puffs drop by teaspoonfuls.)
4. Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.
5. When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.
6. Serve with chocolate sauce (such as Hershey's) if desired.

Gooey Apple Sheet Cake

For the Cake:
2 cups all-purpose flour
2 cups granulated sugar
1 cup butter -- melted
2 eggs
1 tsp. baking soda
1/2 c buttermilk
2 c chopped apples -- (1/4-1/2 inch pieces)
1 1/2 tsps ground cinnamon
For the Topping:
3 cups powdered sugar
8 oz. lowfat cream cheese
2 eggs
1/4 c oats
Mix melted butter and sugar with a mixer. Add eggs and beat well. Combine the flour, baking soda, and cinnamon in a small bowl. Add flour mixture alternately with buttermilk, mixing well. Fold in the chopped apples. Spread batter into well greased (or sprayed) 13 x 9 baking pan. Mix Topping ingredients and put over cake BEFORE baking. Bake in a 350ºF oven for 40-45 minutes. You can store this on the counter OR in the refrigerator.

Glad you like them. These are one of those things that people ooh & aah over & think you've spent hours making them, when in fact they're so easy. I too use Cool Whip & sometimes fill half with chocolate pudding & half with vanilla. I made these for CA family last spring & they disappeared in minutes. Now that you've mastered the puffs, you can make miniature ones for hors d'oeuvres - fill with things like chicken or shrimp salad. Have fun at the Groundhog Day party! Hope you don't see your shadow. :D

I like your idea about the individual cheesecakes....and the way I make 'em they're not alot of work. Use your favorite cheesecake recipe; put foil-lined mini cupcake holders into tins and put a Nilla Wafer into each. Bake, let cool, and top with canned pie filling.

Wow, you guys came up with a lot of really good ideas. DH wants me to make a little bit of everything, so he can decided what I should take along on Sunday :rolleyes:
I think I'll go with the CREAM PUFFS even though I never made something like that before. They sound like something people can just grab and eat.
