If I want to make my banana bread recipe into muffins... how would I adjust the baking time and/or temp?

I have done something similar. Just cook 20-25 min. until tester comes out clean.

Thank you! I have some really ripe bananas at home and wanted to make muffins this time instead of the bread!

I actually did this the other day, for the first time. I'd do as dorothyntototoo said, 20-25 minutes. But, I'd also check on them before that, just in case. I think mine took about 20 minutes.

patsyk, I've never met a sweet bread recipe that I haven't turned into muffins, and I've made a lotta muffins. Usually bread recipes are cooked longer and slower, but muffins are best cooked at a higher temperature. I cook most muffins @375° and the time depends to some extent on the recipe and also the size of your muffins and the container they're in - if I haven't made a recipe and don't have a record written down of how long they took I will start with a peek at about 17 min and a toothpick test if necessary then - some are done just about then, some need a minute or 2 more and some need 5 more minutes. Just keep checking with a toothpick til it comes out clean at which point they are done.
As an example, here's a new lowfat recipe I tried 2 days ago - it made 15 muffins and took 18 min @375°.

Recipe 18102 of 281476

Banana Date Loaf
Yield: 14 slices

1 1/2 cup unbleached flour
1 1/4 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp allspice
2 tsp cinnamon
1/2 tsp salt
1 whole egg
1 x egg white
1 Tbs canola oil
1 cup chopped dates
1/2 cup firmly packed brown sugar
2 large bananas very ripe
1 1/2 cup buttermilk (lowest fat)
1 tsp vanilla

Sift together into a large bowl the white and whole-wheat flours, baking power, soda, spices and salt. Lightly combine the egg and egg white. Make a well in the center of the dry ingredients and add the eggs, oil, dates, and brown sugar. Stir to mix well but do not beat. Mass the bananas in a processor; add buttermilk and vanilla and process to blend. Pour into the batter and mix thoroughly.
PREHEAT OVEN to 350F.
Pour batter into a nonstick 8-1/2 by 4" loaf pan and bake for 40 to 55 minutes in the bottom third of the oven, or until the center is done (test with toothpick). Cool for 10 minutes on a rack; remove from pan and continue to cool on the rack. Cut into 14 slices.
APPROX: 205 cals, 2 g fat (8.7%), 15 mg chol.
