flavored vinegars

I am interest in making flavored vinegars and need recipes for making the vinegars and for using the vinegars once made. Any sources you can recommend would be appreciated.

jo - WELCOME! I pulled this out of Martha Stewart Living July/Aug 1999 thinking I'd make "Pepper Vinegar"...I haven't. So, I don't have any input on ya or na. Let me know if you use it. This is what she had to say:

"Pepper Vinegar, once you've made this peppery vineger, you'll have a never-ending supply on hand-whenever you run low, just add more vinegar to the bottle. Fill an emply jar or bottle with fresh, clean chile peppers; top off with distilled white vinegar. Drizzel the spicy vinegar on steamed greens or french fries, or use it to add heat to a vinaigrette. Peppery vinegar must be kept in the refrigerator."
