View Full Version : ISO: Chicken Soup Recipe
I have a nasty cold and my neighbor just brought me over some homemade and very tasty chicken noodle soup. I have never tried to make it myself so I was wondering what your favorite chicken noodle soup recipes were (they don't have to be light). I know this isn't the normal season for a posting like this but this cold is making me want more soup. Any ideas? Hi PJB. I just made chicken noodle soup for my husband who was ill....what a horrible season for sickness! Either way, here's what I do....
3/4 pound cooked chicken, cut into 1/2 inch pieces
1 1/2 cups chopped celery
1 1/2 cups chopped carrots
1 cup chopped onion
a clove or two of garlic
4 cans low-sodium chicken broth
1 cup frozen peas
1 cup uncooked gemelli or rotini pasta
salt and pepper
1 bay leaf
Combine all ingredients in a dutch oven and heat to boiling. Add pasta, return to boil. Reduce heat and simmer 10-15 minutes or until vegetables and pasta are tender.
Depending on what kind of time I have, I use canned chicken or make my own and then shred it.
