View Full Version : Question about Buttercrust Corn Pie

I am making the pie right now and the only ingredient I don't have is the green onion. Do you think subbing regular onion is OK? I guess I should sub less of it, though, as it is a lot stronger than green onions. The recipe calls for 1/2 cup green onion in the filling. I was thinking of putting in a scant quarter cup of finely minced white onion (I also have red onions on hand). What do you think?

Uh, oh. I also don't have onion salt. This is what I get for deciding so late in the day to make something. I am not sure how much impact the onion salt would have. Maybe I will just put regular salt and the stronger white onions will make up for the onion flavor. Goodness. I made this dish last night and I think you could use either the white or red onion as a substitute. The red may look prettier in the dish if that matters to you. Good luck!

you could substitute garlic salt or just regular salt I suppose. I do this all the time too. In fact, I didn't have onion salt last night so I used onion powder. Tasted good to me!

Thanks for the replies, Jogren. I used the white onion and regular salt. We really enjoyed this dish. However, I used some jarred salsa as I did not have ingredients for the fresh on hand. The jarred stuff just isn't the same. I can imagine how well fresh tomato salsa would have gone with this. I will have to make some before I eat the leftovers.
My husband and I agreed that this was a bit lacking as a main dish and would be better as a side. Paired with some grilled chicken or something like that and the fresh salsa, this would be super!

Laura, Yesterday I made the Cheddar-Jalapeno Quesadilla Salad and I used Newman's Own brand of salsa (That would be Paul Newman's brand). Anyway, this was a really good tasting salsa. Better than I have had in most restaurants and better than any other bottled salsa I have had before. I got the "medium" spiciness and it was relatively hot. I would have liked it even hotter but DH is a bit sensitive. Val

Glad it worked for you Laura! I agree, it may be better as a side dish. A grilled chicken breast, the corn pie and the salsa would be great!

I made this tonight too and we both really liked it. I was able to half the recipe and make it in a little corningware dish so there's just 1 serving left over ..perfect for lunch!! I just hate having so much leftover. The salsa is a must, we just had that with black beans and key lime pie for dessert. YUM!
