Yesterday, I made the Easy Lemon Squares from April '99 (also on the cover of CL 2000 Annual)and they were fantastic! My roommate and I ate all but 3 of them http://www.cookinglight.com/bbs/tongue.gif (yeah, I know, we can be gluttonous!)and I may make more today (to be savored slowly).

Advice: do not make this recipe if you didn't care for the Chicken Francais as it is very, very tart!

I made these a couple of nights ago and think they are really yummy. The first day, however, I thought they smelled and tasted a little bit "eggy". To me they taste better on the second day and also the crust has a chance to firm up. I cut into them while they were warm and the crust was crumbly. Anyway, has anyone tried to make these using only 2 eggs instead of 3? I think I had the same problem with the CL lemon curd recipe. Am I doing something wrong or do I just have a very good sense of smell/taste?

Oh also, Wendy mentioned that they are very tart, but in my opinion I don't think they are overly tart. If anything, I don't think they're quite tart enough.

Linda, I mentioned that they are tart because I made this around the time that Chicken Francais (another excellent recipe)was being reviewed. The naysayers found it "too tart". In my opinion, there is no such thing as "too tart" but I was trying to issue a warning to those with that aversion.

I thought I was the only one. I couldn't get past the eggy smell. The lemony flavour was great, but they didn't seem quite right to me.

Tina, I'm also glad I'm not the only one who noticed this. I think I might try it with 2 eggs next time and I will report back. I guess I didn't have too big of a problem with these, because I ate nearly the whole pan by myself within a few days! http://www.cookinglight.com/bbs/biggrin.gif
