Corny Question: Has anyone made any of these?

I have made the Easy Corn Puddingseveral times. My daughter loves it! It is similar to the corn "thing" they serve at Chevy's on the kid's meals. It is softer than corn bread but firmer than a pudding. Hard to describe. I think it would be great with enchiladas!

I also love CL's four-corn pie, which is on their website. For the kids, I go lightly with the chiles.

Well, I made the Easy Corn Pudding this time. It was a hit! Everyone loved it with the Enchiladas. Definitely a repeater. I was getting tired of the rice and beans sides with Enchiladas and wanted to try something new.

The 4 Corn sounds delicious too. I must be on a Corn Kick!

Out of the CL Complete cookbook, I am looking at the Four Corn Pudding, page 301, The Easy Corn Pudding, page 491, or the Corn Custard with Chives, same page, or the Corn and Green Chili Souffle?

I am wanting to make a corn side dish for some Enchiladas tonite, and wondered if any of these are any good!
