Hi all,
Has anyone made the Grilled Chicken with Hot n Spicy Tequila-Orange Marinade from the May issue?
Wondering if this is worth wasting a whole cup of tequila on! DH doesn't like his dinner to be on the sweet side, so I wondered how the orange juice affected the taste of the chicken.

I made this recipe for a Cinco de Mayo fete for 15. Everyone LOVED it!

Please do post your review crlykat -- especially how your husband likes it. I'm in the same situation -- with rare exceptions, my hubby doesn't like any sweetness to his dinner, especially if it involves orange. But this recipe sounds so good to me I really want to give it a try.

Made this last night.
This marinade recipe makes a lot of marinade--I have a 5 cup blender and I had to blend in batches. Then I realized I didn't have a seive, so I used my flour sifter instead! But it worked fine and produced a lot of liquid.
I didn't tweak the recipe at all and let marinade for the recommended time of 2 hours. I used chicken breasts.
Since I don't eat chicken or beef, I'll tell you what my DH said. He loves spicy foods and is a very good cook himself.
He said it was VERY tender, and was very flavorful. It was a warm-spicy, not a hot burn spicy. It was a bit sweet, but not so much that he didn't enjoy it. The flavors were more complex than most dishes, like a restaurant might make.
The chicken looked really good,too, with a nice brown glaze, probably due to the orange in the marinade. He said it was very good and wants to make some more tonight! (Except he wants to add chipotle peppers to the marinade this time. I'm not too sure about that, but I guess we'll find out if it's too hot to eat! http://www.cookinglight.com/bbs/smile.gif )
I served this with pinto beans and mixed steamed veggies.

lorilei- so glad you liked my review. I often have to "grill" (yuk yuk) DH for details like these about chicken and meat recipes so I know how to improve them for next time.

DH wants to add at least 2 chipotle peppers in adobo sauce to the marinade. Since he won't be eating the peppers themselves, does anyone think this is too much or not enough?
As a gauge of palate, he likes habaneros.

That was an excellent review crlykat -- I will definitely give this one a try. About the chipotles -- have you or your husband cooked with them before? I tried them for the first time just a few months ago and I was surprised by how much of a hot punch they packed! Maybe you should start out with just one unless your husband is really into hot stuff. My husband is very into spicy foods, but he also isn't wild about smoke flavor, so I may spice it up with some extra jalapeno rather than chipotles. Thanks again -- Beth

Actually, to be candid, I cook with chipotles all the time (also being a habenero lover), and I would gauge that two medium peppers is about right for the recipe.
YES, the recipe will pack a punch, but two peppers shouldn't necessarily be enough to spark a four-alarm fire in his gullet http://www.cookinglight.com/bbs/smile.gif
Please let us know how he likes the "upgraded" recipe! I'd be curious to try it with chipotles myself...

He ended up using three chipotle peppers in the marinade, and he threw in the juice of a lime that we had laying around.
He said it retained the same good flavor as the night before and was just more of a hot spicy. Still good and tender.

Uh-oh, I told him I told you all about this and now he's worried! He said "Couldnt you wait til I had eaten my lunch to report?"
See, last night he nibbled at little pieces of the chicken and ate the tenders that came of the new recipe, but for lunch he has a whole chicken breast.
Now he's afraid those nibbles weren't enough to really tell and your whole dinner is riding on his opinion. He's so funny to be worried!

We had this for dinner last night. I added 2 chipotles in adobo. I also marinated this for about 6 hours. I thought the marinade was a lot of trouble to make. After marinating for as long as it did, I was a little disappointed that the chicken didn't pick as much of the marinade flavor as I thought it would. I wonder if I did something wrong....well, it was still good, just not what I expected.
