We are having my parents over for dinner next weekend for their 41st Anniversary. I have my dinner menu all planned but I have been toying with idea of making them a "mini" wedding cake for dessert. Those dang Food Network Wedding Cake Contest shows started it all! :D

So, can I just make a two-tier cake with a standard yellow cake recipe? Will the top layer be thick enough? I wanted to avoid buying any new pans if possible (trying to save for our wedding!). Could I just make two 8-inch cakes, but cut a smaller circle out of one of them for the top? Or maybe a square cake?

Calling all bakers! Please help!

I think my parents would love this idea, they didn't have a very formal wedding, in fact I don't even think they had a cake!

Thanks in advance for the help!

Leigh

Sure, you can cut down one layer. I suggest you freeze the cake first. Do you have a springform pan? If you have one larger or smaller than your standard round pan, you could use it for one layer.

You can cut one layer, but I'd be worried about it being lopsided. You might try to find a 6" pan to use on top of an 8 inch or a 9 inch (preferably the latter, since a 6 on top of an 8 will only give you an inch difference all around). I found a pretty inexpensive 6 inch cake pan at Michael's (actually a really good source for baking and decorating things). They might carry that sort of thing at AC Moore as well.
