We would really like a recipe for a lowfat vanilla ice cream or frozen yogurt that we can make in a freezer at home. Really miss having ice cream with the wonderful fresh berries that are coming into season. Any ideas will be greatly appreciated. Thanks

I am also looking for ANY good lowfat homemade icecream recipe. I recently got an ice cream maker which I want to put to good use!

Low-fat French Vanilla Ice Cream
There's nothing better to top off a meal than a big bowl of homemade ice cream. If you've made your own ice cream before you know the ingredients: whole eggs, whole milk and cream. Those ingredients add up to lots of fat. So I've remade a recipe for French vanilla ice cream. It's smooth and creamy like the original, and while it's low in fat it's anything but low in flavor.

Be sure to use vanilla flavoring instead of real vanilla.
Real vanilla extract contains alcohol
which sometimes keeps the
ice cream from freezing.
Dress up your homemade
ice cream with fresh fruits
or prepared topping.
Just make sure to check the
ingredient label to for fat and calorie information.

Ingredients:
2 cups skim milk
1 cup sugar
4 eggs, beaten
2 cups evaporated skim milk
1 1/2 tbsp. vanilla flavoring
Preparation:
Combine milk, sugar and eggs in large saucepan. Cook over low heat, stirring constantly, until mixture thickens and coats spoon (160 degrees), about 15 minutes. Remove from heat.
Stir in evaporated milk and vanilla flavoring. Chill.

Freeze in ice cream maker according to manufacturers directions. Makes about 2 quarts.

THANK YOU, VANESSA!!!! You are so generous to share this wonderful recipe. I know you had to put in quite a bit of time and effort to come up with an original recipe. My husband and I both really appreciate it!

One other thing you can do, if you wish to use real vanilla, is to "infuse" the milk with a vanilla bean. I can dig up the technique if you'd like... I have an excellent MS dessert recipe that has vanilla infused milk for part of the recipe.

Does anyone have any recipes where you don't need to use a proper ice cream maker?

I looked in different books and sites but only came across this recipe without using n ice cream maker. You can also make ice cream by cranking by hand the ice cream

Easy Ice Cream

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 Cup warm water
1 Teaspoon Gelatin Powder
2 Cups milk
1 Teaspoon vanilla
1/2 Cup honey
1 Cup evaporated milk
1/2 Cup Addins: Fruit, Nuts, Crushed Cookies, Etc.

Place warm water in bowl, add gelatin and blend well. Add 1
cup of milk and the honey; mix well. Add vanilla, remaining
milk, evaporated milk; mix well. Place bowl in freezer for
2 hours or until ice cream is very hard. Remove from freezer
and beat mixture with whisk until frothy. Mix in the add-ins.
Return bowl to freezer for another 2 hours.

Thanks for the suggestion, Annette. I would love to have the recipe for the vanilla infused milk. I just ordered some vanilla beans from Pensey's and was thinking about how I could use them in the recipe.

Morning, all! This was in a recent Southern Living Living Light column. It seems to require an ice cream freezer, but still sounds tasty!

Vanilla-Cinnamon Ice Cream ("while this delicious ice cream contains no fat, it is not a low-cal dessert.") (geez, can't have it all, can we?)

2 (l4 oz) cans fat-free sweetened condensed milk
l quart fat-free half-and-half
l Tbs. vanilla extract
l tsp. ground cinnamon
Garnish: cinnamon sticks

Stir together all ingredients, and pour into freezer container of a l-gallon electric freezer.

Freeze according to manufacturer's instructions. Serve immediately (like anybody'd wait to eat ice cream?!), or place in freezer. Yield: 7 l/2 cups

per l/2 c. serving: l89 cal; 0 fat; 4.lg protein; 0mg chole; ll7mg sodium.

I tried Vanessa's recipe and it was very good. The eggs gave it a custard taste. I invested this weekend in the Cuisinart icecream maker this weekend on the advice of the board. $49 at Sam's club w/ice cream scope and dishes as the bonus.

I am looking forward to trying lots of new ice cream recipes.

Thanks for the feedback, Nanci. I found a C/L recipe for Strawberry Buttermilk Ice Cream from June 1998. It sounds wonderful. It's supposed to rain today and on the 4th, so I don't know if ice cream will sound too appealing, but I certainly want to give Vanessa's recipe a try.
