Anybody have a homeade favorite vinegarette that might taste good with the Jicama Salad? I found it in the menu pairings at the back of the June issue and it consists soley of jicama, oranges and green onions. Thanks.

Here's a recipe that's similar that's really good.

JICAMA AND PINEAPPLE SALAD WITH CILANTRO
VINAIGRETTE

Chopped cilantro in the dressing and whole leaves mixed with the spinach add a double dose of cilantro flavor to this salad.

1/3 cup vegetable oil
3 tablespoons white wine vinegar
1 tablespoon minced shallot
1/4 cup chopped fresh cilantro
1/4 teaspoon ground cumin

1 6-ounce package baby spinach, stems trimmed
1 small jicama, peeled, cut into 3-inch-long matchstick-size strips
1 cup cubed fresh pineapple
1/2 cup cilantro leaves

Whisk first 5 ingredients in small bowl to blend. Season with salt and pepper.

Combine all remaining ingredients in large bowl. Toss with enough dressing to coat. Divide salad among 4 plates.

Serves 4.

There is an Orange-Soy Vinaigrette in the Complete CL. It has pineapple juice, soy suace and sesame oil in it and quite tasty-can post if you'd like or if you have the book it's on page 424.

laura b - i think the best way to describe it is a cross between and apple and a potato. it's semi - sweet, but not dense, so it's airy and crunchy. all you need to do is cut off the outer skin, then slice the white flesh. it's really delicious alone, or with dip, and in salads.

Thank you, Goldilocks. I have always wondered what on earth jicama was. I should try it soon!
