Hey everyone...

looking for some inspiration.... I would like tomake Fondue for a dinner for DH and I for Valentines Day.... I would like to try something different, not the traditional Emmenthaler/ Swiss/ Kirsch combo... any suggestions for any other cheese fondue????

I haven't made this but it looked good on tv.

Pizza Fondue

12 oz Shredded mozzarella
4 oz Grated parmesan reggiano or grana padano
2 Tbs Butter
1 Large clove garlic
4 fl. oz. White wine
2 tsp Lemon juice
1 Tbs Corn Starch
1 Small onion
2 Tomato: peeled & seeded, dice
1/2 tsp Dried oregano
1/2 tsp Dried basil
1 tsp Salt
6 Toasted or grilled pita bread cut into wedges
1 oz Extra-virgin olive oil for brushing pita
"Toppings"
Pepperoni
Sausage
Black olives
Green & red peppers
Anchovy
Meatballs

1. Sauté on low heat in the butter the onion, garlic, tomato, until onion is translucent. Pour in lemon juice and wine.
2. Dust cheeses with corn starch and slowly add to mixture, mixing until smooth. Transfer to fondue pot.
3. Add "toppings" of choice to fondue and use pita wedges to dip fondue.

Yield: Serves 6

I have a Le Creuset Fondue cookbook...I'd be happy to post any recipes! Here are a few of the different ingreduent combos:

cheddar, sherry, and dry cider
cheddar, tomato, tuna, sweet corn
cheddar, ale, mustard
mushrooms, sherry, Gruyere, cream
brie, onion
avocado, wensleydale cheese, parmesan, wine
hawaiian fondue


just to name a few! I can post more later.

Rebecca - would you mind posting the cheddar/ ale mustard fondue? that sounds interesting.... do you have any other particular favorites from that book?

Dorothy - that pizza fondue looks fantastic! I am having my girlfriends over tonight, that might be a good one for us to have tonight!!

here are some that i've liked:

BEER FONDUE

Serves 3-4

1 cup beer
2 cups (8 oz.) cheddar cheese, grated
1 clove garlic, crushed
1 oz. butter
1/2 tsp dry mustard
2 Tbs. cornstarch
little extra beer
French bread, for serving

Place beer, cheese and garlic in fondue pot. Cook over a low heat, stirring constantly, until cheese has melted. Stir in butter. Blend mustard and cornstarch with a little extra beer. Add to fondue, stir until thickened.

DEVILLED FONDUE

Serves 3-4

8 oz cheddar cheese, diced
1/2 oz. butter
1 Tbs. flour
1/3 cup milk, warmed
1 tsp. Worcestershire sauce
3/4 tsp. grated horseradish
1/2 tsp. salt
pepper to taste
1/2 tsp. paprika
1 egg, separated
2 Tbs. sherry
French bread, for serving

Melt butter and cheese in fondue pot over a very low heat. Stir in flour and then warmed milk and seasonings; stir until thickened. Add beaten egg yolk, cook for a few minutes. Remove from heat. Fold in stiffly beaten egg white and sherry.

Variation: 2 tsps. anchovy paste can replace horseradich for a different flavor; omit salt.

INNERSCHWEIZ FONDUE

Serves 4

2 oz. butter
1/2 cup flour
1-1/4 cups milk
salt
1-1/2 cups (7 oz.) gruyere cheese, grated
1/2 cup (2 oz.) blue cheese, curmbled
1/2 cup white wine
freshly ground white pepper
French bread, for serving

Melt butter in fondue pot, stir in flour and cook, stirring, 1-2 minutes. Remove from heat; add milk gradually, stirring constantly. Bring to boil and cook until very thick. Add salt to taste. Add gruyere cheese, stir until melted, then add blue cheese. Gradually stir in wine and bring to bubbling. Season with pepper.

The beer fondue is the exact one we make. We use a shot of prepared (sandwich) mustard instead of dry though. So good. Funny, I was just saying in a PM to Gracie this morning that this weekend was going to be a good fondue weekend because of our snowy forcast!

I agree Katy - I feel like we have had a really mild winter - I am almost looking forward to the snow... have to get a lot of good movies or load up the tivo in the next few hours!!!!!

I'm not much of a recipe person when it comes to fondue. I just see what kind of cheese sounds good & pair it with a beer or wine, add some sauteed onions, garlic, etc. One of my favorites is a super sharp white cheddar with Woodchuck hard pear cider (it's good with the apple too, but I prefer the pear), onion, garlic, and just a bit of worchescershire.

This stuff is CRAZY good!

Cream Cheese and Crab Fondue

1 8oz package cream cheese, room temp.
1 C half and half (divided)
1Tbls butter
2 Tbls green onions
1 clove garlic, minced
4 oz blue cheese crumbles (or to taste...I usually add a little more.)
8 oz crab meat (canned works just fine.)
2 Tlbs lemon juice
1/4 tsp tabasco sauce

Beat cream cheese with 1/2 cup of the half and half. In large sauce pan, melt butter, add green onions and garlic. Stir in remaining 1/2 cup of half and half and cook until hot. Reduce to a simmer and add the cream cheese mix alternatley with the blue cheese crumbles, whisking till smooth. Stir in crab, lemon and tabasco.

Serve with torn bread chunks.

We make fondue every New Year's Eve - a different recipe every year. So far our favorites have been a Brie & Pesto fondue and a Smoked Cheddar & Apple Cider one. We enjoy finding the new recipes each year; we always make our notes and add what we served with it. The staples are bread cubes (of course), grape tomatoes, broccoli & cauliflower florets, celery, carrots, granny smith apple slices, and sometimes sugar snap peas.

glad you and your friends enjoyed it.:) here is a cheddar/cider recipe i have; i suppose you could just sub smoked cheddar:

CIDER FONDUE

Serves 4-6

1 clove garlic
1-1/2 cups dry cider
2 cups (8 oz.) cheddar cheese, grated
1-3/4 cups (8 oz.) Swiss cheese, grated
4 tsps. cornstarch
1/2 tsp dry mustard
pepper
2 Tbs. Calvados (apple brandy)
French bread, for serving

Rub inside of fondue pot with cut clove garlic. Put 1-1/4 cups cider in pot and place over low heat until warm. Add cheeses and stir until melted. Blend remaining 1/4 cup cider with cornstarch, mustard and pepper to taste. Add to fondue pot and stir until fondue is bubbbling and thickened. Stir in Calvados.

No snow for me yet! But they say close to 15 inches!

I made this fonudue for supper club and it was great.

Green Fondue with Fresh Herbs
1 small clove garlic
1 C med-dry white wine
1 Tbsp fresh lemon juice
1 1/4 lbs Gouda or Edam cheese, shredded
1 Tbsp potato flour or cornstarch (cornflour)
1/4 C chopped fresh parsley
2 Tbsp chopped fresh chives
2 tsp tarragon (I didn't use this since I didn't have it)
pinch of cayenne pepper
1/2 tsp ground white pepper
1 Tbsp gin

Rub a medium, heavy saucepan with garlic clove. Add wine and bring just to a boil. Add lemon juice and immediately lower heat to medium-low. Toss cheese with potato flour or corn starch, then add to the pot by the handful, stirring with each addition until just melted. Add herbs, seasonings, and gin. Cook for 2-3 minutes then transfer to a warmed fondue pot. Serve with bread, vegetables, and meals alongside.
