View Full Version : Yeast Baking Question - soft pretzels

I am making heart shaped soft pretzels for my DS's Mommy and Me class. I would like to make the dough and bake them in the morning. Would you refrigerate the dough overnight and then roll, shape and rise or would you refrigerate them already shaped? How much longer do you think they would need to rise from the fridge?

I did a trial run tonight and they are great!

You could do either with good success, let the first rise go slowly in the fridge overnight or shape them and then refrigerate before the baking soda dip. I guess it would depend on how much time you had to prepare in the morning.
