I have a big jar of tahini that I will never be able to use before it expires. I would like to freeze it in small portions to use later. Does anyone know if that will work, or will the consistency change?

I have been making humus for 12 + yrs now with tahini and have never had to freeze it. (I keep it in the very back of my fridge so as not to run into in often.)Why Bother? I just keep it in the fridge and it's fine, almost like peanut butter. I didn't even know it had an exparation date!!! I would say after my experience, refrigerate it and it'll be fine 'till - whenever - pretty much!
PS I have NEVER had a problem with it's freshness, EVER!! http://www.cookinglight.com/bbs/wink.gif
