I made up this recipe for Pineapple Black-Bean Enchiladas and
I wanted to share it with you, in hope that you can try it and support me in a cooking contest.

It is delicious, sweet and savory, heathy, low in Fat, high in Fiber, vegetarian, and easy to make! I entered it into the Pillsbury Bake-off and found out I'm a finalist. :)

If you like it, you can vote for it by February 28th (2 weeks away!) and by voting you will be registered to win a trip for two to Orlando to see the Bake-Off!

To vote:

3. Scroll down and vote for the recipe in your voting pool.
4. Enter Name, Address, email, etc, (the 'code' is case-sensitive), then
5. Click to Confirm your vote! You will receive a conformation if you vote was accepted.

I never would have thought such a simple recipe would have gone so far but it has been alot of fun. I'd love to know what you think of it! Thank-you!!

Mary, major congrats on being slected as a finalist! that is so cool! you say it's 'simple' but that's what they (and the average person) want, not long lists of ingredients and complicated techniques. i'll keep my fingers crossed for you.:)

Congratulations, Mary! I've always wondered what it would be like to try and enter one of these contests. I know the Pillsbury Cook-Off is especially well-known, so I think it's great you've made it this far.

Your recipe looks really yummy and you got my vote! Good luck!

Thank-you so much!! I made up the recipe for a party I was throwing my vegatarian best friend. I knew it tasted good but I didn't give it much thought until guests at the party were raving about it and insisted I had to enter it into a contest if I ever saw one. I think that If I had "tried" to make the recipe for the Bake-Off, it would have been more complicated and, you're right, likely would not have made it.
