I got July issue of Bon Apetite and was wondering how can you do some of the chicken I don't have a grill and was wondering at temp should i bake it at. Is there some rule of thumb to follow by. thank you matt

While I don't have this issue of Bon Appetit, most chicken is baked at 350º. So without a reference to the reciipes I can't offer any more help than that.

Very often I see recipes that say you can grill or broil. Depending on the type and size of the chicken, you could try broiling it, turning it, broiling it, checking it for doneness.

Matt: Get a grill pan, iron if possible, with all the ridges, and you can bbq on your gas burner. I do chicken breasts this way all the time. Spray the IRON GRILL PAN with a little pam, put in your chicken breasts, "bbq" on the "underside" first, then turn, apply bbq sauce, continue to cook until it is no longer pink in the center. Made this last nite!
