View Full Version : Balsamic Browned Butter Question

Help! What am I doing wrong? I’ve made the Roasted Asparagus with Balsamic Browned Butter on several occasions without incident. However the last two times, whenever I add the soy sauce or balsamic vinegar to the melted brown butter, it “bursts” and splatters hot butter all over me, the cabinets, floor, counter….everywhere!

After the first time, I let the butter cool (off heat) for about 30 seconds before adding the other ingredients, but it still happened. Has this happened to anybody else??

Oh goodness, I'll be following this thread closely as I had planned to make this for the first time tonight!

I just let it cool down for a few minutes, then add just a touch of the vinegar and stir it in, then a touch more, and by then it's cool enough to mix all of the vinegar in. Then I reheat it and let it thicken a bit.

This has happened to me when I've added the vinegar to the hot butter. I now wait for it to cool a bit and add the soy sauce first.

It actually does some violent bubbling when I add the other components, but hasn't splattered anything outside the pan, maybe try a deeper saucepan or just let it cool down a bit.
