I know that this doesn't fall under the "cooking light" catagory however I am hoping that someone can grant my request. I am searching for a recipe called "mock lobster pie." I have only heard of it and it uses Ritz crackers in place of the lobster. It is supposed to be very good. Does anyone have it and are you willing to post it?

I just found this on the internet... It sounds like what you were looking for. I would never have thought crackers would substitute for lobster... Let us know what you think if you make it.
Title: Mock Lobster Salad
Categories: Salads
Yield: 5 servings
Patdwigans fwds07a
2 # fresh tomatoes, fresh
Tomatoes are preferred, but
You can substitue 2 16 oz
Cans tomatoes
1 Green bell pepper finely
Chopped
4 Ribs celery chopped
1/2 Medium onion finely chopped
1 1/2 Cups cracker crumbs
1 1/2 tb Mayonnaise or to taste
2 Hard cooked eggs
[peeled and chopped]
Leaf lettuce, rinsed and
Drained well.
Rinse tomatoes; chop into small pieces [if using
canned tomatoes, drain then mash or chop]. Add green
pepper, celery and onion to tomatoes. Add enough
cracker crumbs to absorb tomato juice. [with juicy
tomatoes, it is quite possible you'll need moer than 1
1/2 cups of crumbs] ADD 1 T mayonnaise to tomatoe
mixture. Mix well. Add remaining 1/2 T mayonnaise, if
needed to give salad desired consistency. Add eggs,
toss lightly, refo until well chilled. Serve on
lettuce leaves.

That looks awful! I love both tomatoes and lobster but could never imagine eating that! It couldn't possibly taste like lobster!

Linda (and sneezles) - I'm suspecting this recipe is much like the RITZ cracker Apple Pie recipe which uses crackers in place of apples. That recipe contains NO apple products whatsoever... but still manages to taste like an apple pie! Ah, the wonders of our strange world...

Yes, I thought of that pie recipe, too. But I can see how that can taste like apple pie because of all the spices that go into it. I'm with Sandy though, when I have apple pie there darn well better be apples in it! http://www.cookinglight.com/bbs/wink.gif
Now, I can understand why someone would want to make "mock lobster" recipes because of the price and availability of lobster. However, there doesn't seem to be a single ingredient in that salad recipe posted above that would suggest it's ever going to taste like lobster. http://www.cookinglight.com/bbs/tongue.gif
I've seen recipes for zucchini "crab" cakes that don't contain crab, but atleast they have Old Bay Seasoning in them. Supposedly they really taste like crab cakes.
