OK - this weekend I am hoping to make the following (I'm figuring if I post it, it will be official, and I'll actually do it):

Easy Asian Beef & Noodles
Sesame-Roasted Asparagus
Tequilla Chicken
The Thai Shrimp Soup from this month
Pasta Salad with Tuna

Does anyone else have high hopes for the weekend, and then it doesn't pan out? Or get lazy?

What are your plans, cooking wise, for the weekend?

It happens so often. We get busy doing things, or caught up with the kids activites. Before you know it, it's 5:30 and we're all hungry.

Wow, good intentions, indeed! I have to sing all weekend and then go to our CL supper club Sunday evening. The only thing I know for sure I'm cooking this weekend is the Garlic Lime Chicken from May's issue!! My DH will be lucky if he gets fed at all!

Seriously, my husband and I started out the weekend first with a sailing lesson, then we came home and went to the beach for a run, then came home again, famished, so we went out for sushi.

Our newish regular Saturday morning tradition is to go out for brunch, then later we're going to an Arts and Food Festival in the afternoon.

So we're already starting out on the right track!

Seriously, I hope to make the Eggplant Parmesan Lasagna with homemade tomato sauce tomorrow night. Other than that, we're going to play it by ear.

I am cooking for friends this weekend. One friend loves pound cake and asked if I would make one for her family. Another friend has had back surgery and cannot lift anything. On Sunday, I am having DH and my mothers for dinner. As you can tell, I really enjoy cooking.

Ok -

So far I made the easy asian beef & noodles. A DEFINATE repeater. Very good and easy. I doubles the beef and green onions, quadrupaled the coleslaw (just used the whole bag), and kept everything else the same. It really tasted like it was from a chinese restaurant http://www.cookinglight.com/bbs/smile.gif

I'm sure I'll make the Sesame-Roasted Asparagus tonight (or maybe I'll substitute green beans) but....

We went to costco and they had steamer clams and tiger prawns (15 count), so we got 2 lbs. of each. I also went to the store yesterday and there were crawfish, so I got 2 lbs. of those. With those ingrediants on hand, I probably won't get to any other recipes.

But I am glad to hear that I am not alone, in my intentions v. reality http://www.cookinglight.com/bbs/smile.gif

I'm making the Mediterranean Lasagna (from the April 2001 issue) tonight.

Tomorrow we will be having the Spinach and Prosciutto Strata (from the June 2001 issue).

I do the same thing alot. This weekend, I was too tired to plan, so I wasn't disappointed. We've been making it up as we go along. I made the Easy Asian Beef & Noodles tonight and added some fresh spinach cut into shreds to the cole slaw. It was quick and easy, and I think I might even get my 4 yr old to eat it (kids ats sloppy joes while I cooked grown up dinner). Now if the 7 yr old converts, we have a better than a repeater.

The one thing I have been wanting to make is some scones with those much discussed cinnamon chips. If the rain holds, I think I'll celebrate in the morning.

Here you go - it's one of the recipes from the "main" Cooking Light website. Yum!

Easy Asian Beef & Noodles
Ingredients
1 (8-ounce) rib-eye steak
1 teaspoon dark sesame oil, divided
1 cup (1-inch) sliced green onions
2 cups prepackaged coleslaw
2 (2.8-ounce) packages beef-flavor ramen noodle soup (such as Campbell's)
1-1/2 cups water
1 tablespoon low-sodium soy sauce

Directions
Prep Time: 10 minutes
Cooking Time: 5 minutes

Trim fat from steak; cut diagonally across grain into thin slices. Heat 1/2 teaspoon oil in a large nonstick skillet over medium-high heat. Add steak and onions; stir-fry 1 minute. Remove steak mixture from pan; keep warm.
Heat 1/2 teaspoon oil until hot. Add slaw; stir-fry 30 seconds. Remove slaw from pan; keep warm. Remove noodles from packages; reserve 1 seasoning packet for another use. Add the water and remaining seasoning packet to pan; bring to a boil. Break noodles in half; add noodles to water mixture. Cook noodles 2 minutes or until most of the liquid is absorbed, stirring frequently. Stir in steak mixture, slaw, and soy sauce; cook until thoroughly heated.

OK, I made tequilla chicken yesterday. I made it on the grill, so I marinated the chicken in the rest of the ingrediants, then grilled the chicken theighs, and cooked the tomatoes and onions in the veggie rack (and threw in some green beans).

The chicken was very, very good. It looked kind of nasty marinating in diced tomatoes and onions, but tasted great. Next time I think I will increase the tequilla (couldn't taste it at all). I'm assuming this recipe would taste better on the stove, with all the flavors simmering together. Would I make it again.... probably not anytime soon, but I wouldn't rule it out.

So, I made 3 of my 5 dishes for the weekend (and I made the easy asian beef and noodles 2 days in a row).

I think that was a pretty successful cooking weekend (and a yummy lunch, since I have leftover easy asian beef and noodles).

We ended up making the Eggplant Parmesan from MArch 2001 with homemade sauce instead of the lasagna...with 2 of us, I just couldn't figure out a good way to cut the lasagna recipe using the ingredients called for and the pans I have around. Anyway the Parmesan was a BIG hit! I've never made an eggplant parmesan before, and for some reason I thought it'd be more difficult than it was. It was easy and delicious. I encourage you all to go back and reconsider this recipe if you skipped it the first time.
