I was wondering if anyone has recipes for cooking food in foil packets (in oven or on barbecue). I made chicken this way for the first time tonight (i'll give recipe below) and it was juicy,tasty and very very easy to make/cleanup. my DH ate every bit on his plate!
anyone else cook this way?

Chicken in foil packet w/ vegetables (2 servings)

2 boneless chicken breast halves
1 cup baby carrots
1 small zucchini, sliced crosswise
2 garlic cloves,chopped,
1/2 small red onion, sliced.
salt,ground black pepper to taste.
1/2 cup italian salad dressing (i used ken's steakhouse w/ romano cheese),
1/2 red pepper, sliced.

take two large sheets of heavy duty foil. (all ingredients are divided between the two sheets) place onion slices on foil. put a chicken breast half on top of onion. sprinkle chopped garlic on top of chicken. then lay zucchini slices on top of chicken. surround chicken w/ baby carrots and peppers. sprinkle salt/pepper to taste over whole thing. then pour salad dressing over top.
fold edges of foil over chicken to make tight packets. place packets on cookie sheet and bake at 350 for 30-40 minutes or until juices run clear. or, you could put packets on grill for 1/2 hour, medium heat.

i think this might be even better w/ some wine poured over the top, or using balsamic vinegar and olive oil. also other seasonings would make it different. this was also good since my husband and i get home different times for work, so i left his packet in the oven and ate mine.
i served it over brown rice.

any other ideas?

A friend of mine makes salmon in foil in the oven. She packs it with toppings for a baked potato(that's how I remembered the ingredients). I think she uses, low fat sour cream, cheese, chives, and bacon bits. She said it is wonderful, but I haven't tried it yet. I bet salsa would also be really good in with it, and you could probably cook it in the foil on a grill.

I love vegetables done in foil packets. This is great to have cooking while you grill your meat or chicken. I take a double layer of foil, spray with cooking oil then add all sorts of fresh vegetables like asparagus, green beans, carrots, zucchini, brocolli, onions, mushrooms, cherry tomatoes, small pieces of corn on the cob, lots of crushed garlic, then add fresh herbs like parsley, basil, tarragon, anything you have in the garden. Top this with a little butter substitute like "can't believe it's butter" or similar. Top with another double layer of foil and seal very well. BBQ, turning frequently for about 15 to 20 minutes. I put in a serving dish and grate a little Parmesan cheese on top.

Although I haven't made this, my mom made it awhile back for a dinner party for out-of-town business guests and has not stopped raving about it since! (Actually, she mentioned it yet again when I spoke to her 10 minutes ago - don't you love Moms? http://www.cookinglight.com/bbs/rolleyes.gif ). She said it was the perfect entertaining dish - easy, make-ahead and totally impressive (she is quite the gourmet cook, so her opinion means a lot to me!). The recipe is from More HeartSmart Cooking by Bonnie Stern (a fabulous book!).

Salmon Baked in Parchment with Parsley Pesto

1 cup packed fresh parsley leaves
1/2 cup packed fresh basil leaves
1 tbsp capers, well-drained
1 tsp salt
1/2 tsp pepper
1 tbsp olive oil
6 salmon fillets, skin removed (4 oz each and 1" thick)
2 sweet red peppers, roasted and peeled

1. Place parsley and basil in food processor or blender and chop. Blend in capers, salt and pepper. Add olive oil and blend until mixture forms rough paste.
2. Pat fish dry. Spread pesto mixture on top of each piece of salmon.
3. Cut peppers into 3/4" strips and arrange on top of pesto.
4. Line baking sheet with foil. Place same-sized sheet of parchment paper on top. Arrange salmon pieces on one half of baking sheet. Fold parchment and foil over salmon and seal edges to enclose fish.
5. Bake in preheated 425°F oven for 15 minutes, or until salmon is just cooked through.

Note: my mom added a couple of peeled shrimp on the top of each fillet - she said it made the whole thing look really classy!

6 servings, each: 182 calories, 4 g carb, 1 g fibre, 9 g fat (1 g sat fat), 21 g protein, 57 mg chol, 457 mg sodium, 643 mg potassium.

I did a search for a recipe I had previously made, and couldn't find what I was looking for. But I think this it from the 2000 Annual Index. It's the Chicken-and-Broccoli Teriyaki With Noodles, from the March 2000 magazine, page 104. I'll get out that issue later and double check, or post the recipe if you like. This reminds me that I should make the recipe again. I seem to remember somebody posting a review of it lately, but I couldn't find that either! I know, I'm not much help... Sorry.

I think Krista is referring to the "Express Package" article in the March 2000 issue -- six recipes usings those Reynolds foil bags. I tried the paella but wasn't wild about it.

I made up this recipe about 1.5 years ago, and fiddle with it all the time. The ingredients are DEFINATELY interchangeable, and the flavors and presentation are great:

Salmon in Foil

1) Put salmon on foil.
2) Pour wine over (sauv. blanc)
3) Place onion slices on salmon
4) Pepper
5) put nuts on salmon
6) put mushrooms on salmon
7) put escarole on salmon
8) Drizzle with honey
9) Salt and pepper
10) Bake at 350-375 for 25 minutes
11) open and top with fresh basil and chives

One that we've done at the lake is really easy...you just throw in some turkey burgers, baked beans, and onion slices and throw it on the grill. Everyone in my family likes foil dinners except for me, I guess because I'm wierd. The whole idea of eating something cooked in aluminum foil sends shivers down my spine. http://www.cookinglight.com/bbs/eek.gif

There was an excellent shrimp recipe done in foil awhile back. Shrimp, feta cheese, basil, tomatoes, orzo (I believe). It was wonderful. There were a ton of reviews on the recipe -- it should turn up in a search of this BB.
