DH is currently living in Colorado, and I am in Iowa getting our house packed up, etc. I have some stuff to mail to him, and I made some cookies, but I was also thinking of making some banana bread. Does anyone know of a recipe that would allow me to use up my whole-wheat flour? Can I just use a regular banana bread recipe and substitute in whole wheat bread?

you can just sub ww flour for regular, but you may only want to substitute 1/2. Since the whole wheat flour may overpower the banana taste.
Here's a banana bread recipe I use often from "The Silver Palate Cookbook"--it's not light, but it does use whole wheat flour:
8 T. (1 stick) sweet butter, room temperature
3/4 C. granulated sugar
2 eggs
1 C. unbleached, all-purpose flour
1 t. baking soda
1/2 t. salt
1 C. whole-wheat flour
3 large, ripe bananas, mashed
1 t. vanilla extract
1/2 C. shelled walnuts, coarsely chopped
Preheat oven to 350. Grease a 9x5x3 inch bread pan. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift all-purpose flour, baking soda and salt together, stir in whole-wheat flour and add to creamed mixture, mixing well. Fold in mashed bananas, vanilla and walnuts. Pour mixture into the prepared pan. Bake for 50 to 60 minutes, or until a cake tester inserted in the center comes out clean. Cool in pan for 10 minutes, then on rack.
Voila! One cup whole wheat flour gone... : )

That looks really good! It will actually allow me to use up some other ingredients as well. Do you think I can substitute margarine for the butter? I found some margarine that advertised on the label that it was "better for baking" or something like that.

Eating Well had a recipe from one of their cookbooks for a banana bread made with coffee and some whole wheat flour. This was unique, but resulted in a great breakfast treat. I tried it using all white flour, seeing that the amount of whole wheat flour actually in each serving offers little extra nutrition or fiber. Anyway, I'll post the recipe if you would like.

The book claims that the coffee gives it added richness.
2/3 c. packed brown sugar
1/3 c. hot, strong brewed coffee
1 1/2 c. mashed ripe banana (about 4)
1 large egg
1 large egg white
3 tbsp. oil
1 tsp. vanilla
1 c. all-purpose white flour
1 c. whole wheat flour
1 1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground ginger
1/2 tsp. salt
1/4 tsp. baking soda
Heat oven to 350. Spray a 9 by 5 inch loaf pan with nonstick spray. In a medium bowl, dissolve brown sugar in coffee. Stir in bananas. In a large bowl, whisk together next 4 ingredients. Add the banana mixture. In a separate bowl, combine the remaining ingredients, and add to the banana mixture, stirring just until moistened. Pour into prepared loaf pan, and bake 40-50 minutes or until a toothpick inserted in center comes out clean. Cool in pan on rack 10 minutes. Remove to finish cooling.
12 servings: 163 calories, 4 g fat
I omitted all the spices except for a dash of cinnamon since I don't like lots of spicy flavors. I found the recipe to be just as good using 2 c. white flour.
