View Full Version : Review: May 01: Baked Salmon with Ginger fruit relish
Made this for my inlaws- turned out great. The only substitution I made was using Creole mustard-it adds alittle extra spice to it. I also forgot the pineapple in the relish, but liked it all the same!!! It does have a lot of ginger, so if you like ginger this is a great one to use.
Also, I recommend using wild salmon, though more expensive than farm raised, it has a much better flavor, it doesn't taste fishy at all!!!!

i really have to agree that this was a wonderful dish! The relish was just plain fantastic. Also mangos here were running 4 for a dollar. They were a different type of mango than what i normally see. They were yellow and they tasted so much sweeter than the greenish/red type. Amy, that was a good switch to use the creole mustard for that extra spice it balanced perfectly with the sweetness of the relish.

I just made this recipe tonight, and thought it was excellent. I pretty much followed the recipe, except that I used less mango in the relish (at $1.50 each, they are expensive!!). DH, who isn't much of a fish eater, liked the salmon (he only had a taste of the relish, and pronounced it "OK", which is high praise for someone who's not a fan of fresh sauces and relishes). The ginger in the relish makes this one different from all the other mango salsa recipes. Overall, I'd give it 9/10.
