View Full Version : Review: Tofu Pita with Peanut Sauce (June '01)

Mixed reviews on this one. The thumbs down is for the tofu. Grilling it is a pain in the behind and I didn't think the sauce had much flavor- I even doubled the recipe for the same amount of tofu.

If you decide to grill the tofu, I advise against cutting it in a diagonal, or try cutting thinner slices. It just didn't grill thoroughly and took far longer than 4 minutes per side. I thought I had sufficiently pressed the water out of it, but it broke apart and was just generally unpleasant. DH spit out the bite he tried. Texture issues all the way.

The pita bread wouldn't open properly, so I just abandoned the whole sandwich idea.

The watercress salad filling was quite good, on the other hand. I added sliced almonds and golden raisins and it was lovely over couscous made with coconut milk and the broken up grilled tofu.

The saving grace for DH was the Asparagus, White Bean, Feta salad from May '01. THere have been many reviews of this, I believe. It was delicious.

A Dry Riesling was excellent with both the Peanut Sauce on the watercress salad, and the creamy asparagus/bean salad.

Oh, that is such a shame because it seemed like a lot of work for a sandwich. I have found though if you heat a pita for about 15 seconds in the microwave, they open very nicely!

Well, I still have plenty left for lunch tomorrow so I will try heating the pita first- thank you for the tip! I think I will break up and stir fry the tofu in a bit of sesame oil first, just to cook it more. It would be so good warm with the watercress salad (and warm pita!)
