Many cooking light recipes call for vegetable oil but do not specify which kind. I usually use olive oil because that is what I have around the house. Is this OK or should I be using a more generic type of oil like Canola?

My understanding is you should use canola oil because olive oil has a taste/flavor to it - where as canola or corn oil does not.

I too use olive oil for most recipes -- and there's nothing wrong with that. Be aware, however, that olive oil does lend a subtle flavor to dishes -- so if you'd like to use a more 'tasteless' oil (with the same health benefits) try grapeseed oil, which is nearly undetectable in most dishes and has a very high heat tolerance (good for stir-frying).
