I just had to post this on the BB.
This weekend we had a going-away "BBQ" for
two close friends that are going to NC to start their residencies. I made the Spice Cucumber Salad w/ Peanuts (June 2001, pp. 120) and the Thai Grilled Chicken (June 2001, pp. 142), but replaced the chicken w/ shrimp b/c I am a vegeaquarian, and both were soooooo yummy, i can't wait to eat them again! The salad was particularly yummy leftover.
I also made Middle Eastern Eggplant Dip (March 2001, pp. 154, a Reader Recipe), and it was so good, it was gone in like 10 minutes.

I just had to share, b/c I really enjoy cooking and I pretty much only use recipes I find in CL.

Ooh, ooh, ooh! Is this a real word, 'cause then I can use it for myself! (Of course, I'm known to make up words on occasion anyway... http://www.cookinglight.com/bbs/wink.gif )

Emily!
there you are, you vegeaquarian. We need you over in Runners' Rambles!

tperes- your dinner sounds wonderful. The combination of the cucumber salad and the Thai grilled chicken (er, shrimp) is irresistible. It's on my list to make!

Sorry Folks! I think "vegeaquarian" is a made up word, but nobody has called me on it yet! But sneezls and emilycat, feel free to toss it around as necessary!

KValley -- let me know if you like the recipes!
