I saw someone have a slice of carrot bread at the mall over the weekend was wondering if anyone has good one to share. Is there a way to have moist without the pineapples not a big fan of them in bread. I hope everyone is okay from Alison. Talk to you guys soon Matt

Since I am now high and dry, sometimes it is hard to remember so many lost so much, but as for those on the board, we are all ok...

I, too, have been thinking of all of you on the BB that live in Houston and the other flooded areas. I am glad everyone is OK.
It must be a horrendous mess down there. Keep us posted.

Date-Nut-Carrot Bread

Carrots add moistness to this traditional date-nut bread.


Ingredients
3/4 cup hot water
1/2 cup pitted dates, chopped
1/2 cup golden raisins
1 cup shredded carrot
1/2 cup coarsely chopped walnuts
3 tablespoons vegetable oil
2 large eggs
1 large egg white
2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
Cooking spray


Directions
Estimated Total Time: 1 hour, 35 minutes

Preheat oven to 350°. Combine water, dates, and raisins in a bowl; let stand 15 minutes. Stir in carrot, walnuts, oil, eggs, and egg white. Combine flour, sugar, baking powder, cinnamon, and salt in a large bowl. Add carrot mixture to flour mixture, stirring just until moist. Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.Bake at 350° for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

Hi Matt. Most of the recipes seem to have pineapple, this one does not. Its from Food and Wine magazine..you can adjust spices to your liking.
Spiced Brown Sugar Carrot Bread
This moist, carrot-flecked bread is deep brown with a very crisp crust.

MAKES TWO 8-BY-4-INCH LOAVES
3 cups unbleached all-purpose flour
2 teaspoons cinnamon
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon crushed cardamom seeds
1/2 teaspoon salt
4 large eggs
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
1 cup canola oil
1 teaspoon pure vanilla extract
Grated zest of 1 lemon
2 1/2 cups shredded carrots (about 14 ounces)
MAKE AHEAD Tip:

Wrap the bread tightly in plastic and store at room temperature for up to 3 days or freeze for up to 2 months.
STEPS:
1. Preheat the oven to 350°. Coat two 8-by-4-inch loaf pans with cooking spray or grease and lightly flour the pans.
2. In a medium bowl, combine the flour, cinnamon, baking powder, baking soda, cardamom and salt.
3. In a large bowl, beat the eggs with the light brown sugar and granulated sugar until smooth. Add the oil in a thin stream, beating at high speed until the batter has doubled in volume, about 2 minutes. Beat in the vanilla and lemon zest. Fold in the shredded carrots. Beat in the dry ingredients at low speed in 3 batches, mixing well between additions.
4. Pour the batter into the prepared pans, filling them two-thirds full. Bake in the middle of the oven for 50 minutes to 1 hour, or until a cake tester inserted into the center of the loaves comes out clean. Let the loaves cool in the pans for 10 minutes before turning them out onto a rack to cool completely.

Carrot bread and flood victims...interesting combination!
My sister lives in a very high flood-prone area (Bellaire) but for once she lives on the right side of the tracks!

DH and I toured some of the flooded areas. I was shocked at what the news did NOT cover. They kept focusing on two or three areas, it seemed, but when I tried to go to Whole Earth Provision on Shepherd (for the Houstonians and, Matt, that's approx. 1/4 mi. in from the flooded freeway) they had a foot and a half of water in their store. So it reach inside, too, not just outside areas.

We also toured some other flooded areas and was shocked at how it had actually been. This is going to go on for weeks as people try to get some normalcy back in their lives. I feel bad for everyone - twolegged and fourlegged alike. It's sad.
