Yum - this is an April 2001 recipe! I made this last weekend, and it was a huge success! I'm looking for another reason to make it again. Guess I will have to invite friends over.

I did make some changes---the biggest one was to swap out the mushrooms since I don't like them. http://www.cookinglight.com/bbs/frown.gif Scary, but it worked beautifully.


I carmelized two Maui onions
I added 3/4 c. drained sun-dried tomato slices to onion mixture
[*} I used fresh spinach instead of frozen
I doubled the recipe
I used regular lasagna noodles but didn't pre-boil them; it worked fine. The newer noodles claim they don't have to be pre-cooked, and I've never had problems taking them up on the statement.
I used a combination of yellow tomatoes and red roma tomatoes--very pretty presentation in the lasagna


The sun-dried tomatoes and carmelized onions were fabulous with the goat cheese sauce. It was also pretty easy to put together.
