I'm making these tonight because of all the great reviews. I have one question...I bought boneless, skinless thighs and I'm not sure how that translates into what the recipe calls for. Specifically, the recipe calls for 4 (6 ounce) thighs. I bought two 1 pound packages (each package contains about 6 little thighs). How many should I make? Thanks all! I don't know what I'd do without all of you. http://www.cookinglight.com/bbs/smile.gif

P.S. I made the Buttercrust Corn Pie for dinner last night and it was wonderful!

I would use all of the chicken thighs and multiply the recipe by 1.5.

Trust me, you'll WISH that you had more left-overs!

I am in total agreement with Julia. I did the same last weekend as I had 6 thighs that we ate that night. Enjoy!

From that same article (which I trying to make every thigh recipe - hubby loves boneless, skinless thighs and cheaper than breasts) I just made the last recipe with Sweet Red Onion and Balsamic Vinegar. Didn't sound that exciting but I had all ingredients on hand and served over mashed potatoes as suggested. DEE-licious! Try it.
