Has anyone made it? I shudder to put a cup of mayonnaise (ick!) into a cake, even if it is low fat (which I don't have on hand...) So, do you think I could substitute yogurt instead?

I haven't made it but I wouldn't think so. Mayo is oil and eggs...

Thanks... from reading the thread it sounds like it was a big hit and maybe I should just get over my aversion to mayo! But it does sound like the mayo is a key ingredient... hmmm... undecided here. Will figure it out!

Well when you think about it - Mayo is basically eggs and oil which are typically in cakes anyways, they are just mixed together first :D

This cake was great. We first enjoyed it at our January supper club. Then last month I made it, & it was even better....because there was more for just the two of us! :D :p :D
The one who first volunteered to make this recipe for our January supper club was turned off by the idea of the 1 c of mayo also, but someone else decided to try it--and we all enjoyed it....not even a hint of "mayo" taste. If you didn't make it yourself you wouldn't know the recipe uses mayo.
A very good & easy cake--and the little chocolate chunks give a nice texture surprise.

I ended up making it without the mayo (I didn't want to go to the store to buy it) and modified with yogurt and a little extra canola oil. It was still delicious (hats off to Anna!), but I can see where the mayo would add a little "oomph" to it. Next time I will just follow the recipe and not be so stubborn!

This cake is fabulous!!! I made it with the mayo and you would never know it had mayo in it. Soooo good! I can't wait to make it again.

foodie18 - i had the same feeling as you, I almost didn't make the cake b/c of the mayo ( it grosses me out!) Anyway i'm glad I made it b/c it was great!! I didn't try the batter, I just couldn't do it!

Carrot Cake
1 yellow cake mix
1 1/2 cups Miracle Whip® light
4 eggs
1/4 cup water
1 tablespoon cinnamon
1 1/2 teaspoons allspice
2 cups carrots -- shredded
1 cup black walnuts -- chopped
1 cup raisins -- plumped and drained
Mix and pour into a greased and floured 9x13x2" pan. Bake 350 degrees, 35 minutes. Frost with cream cheese frosting.

I made the mocha cake this weekend. Everyone loved it and no one even believed me when I said it was a "light cake" that used 1 cup of low-fat mayo. Many asked for the recipe.
I made two 9-inch round cakes, and layered them with some of the frosting between the layers. The frosting was a little soft to actally do that so it drooped out the sides. I still think the cake looked great, no one cared cuz it tasted so good! Any suggestions for firming up the frosting so that the cake can be layered in the future?

I wonder if you could decrease the amount of water/coffee to the frosting or use a little less cool whip. The fluff is pretty sticky/stiff on it's own. Another option might be to whip low fat cream cheese and confectioner's sugar to make a nice frosting and then add coffee perhaps to get a similar flavor?

It is a very good cake. My family has been making mayo cake for years, it was my father's favorite, with white buttercream icing. Check out the recipe on the Hellmann's site. Mayo adds a nice background flavor, like cinnamon or ancho pepper in Mexican chocolate cakes.
