I would never claim that this is the best but it is very good IMHO and I'm sure once this is posted others will have their opinions...

Grilled Marinated Portobella Mushrooms

Amount Measure Ingredient -- Preparation Method

4 large fresh portabella mushroom caps
3 cups dry red wine
2 tablespoons shallots or red onions -- minced
2 tablespoons fresh garlic -- chopped
1/4 cup olive oil
1 tablespoon fresh rosemary -- chopped
1/2 teaspoon dried thyme
Salt and pepper -- to taste
Place mushrooms in a shallow pan; combine remaining ingredients and pour over the top of the mushrooms. Marinate for 1-2 hours, turning once. Remove from marinade and cook on hot grill for 3 minutes on each side. Slice and serve as a side dish or main course.

Well, I don't know if I'd call it the best way but here's one way I've done it recently. Removed stem and gills from cap. Brush cap with olive oil or marinade. Grill over medium/direct heat for approximately 5 minutes on each side. If you want to top it with something - grill 4 minutes on each side - starting with the "stem" side down. After 8 minutes add your topping/stuffing and grill another couple of minutes. I recently did this with carmarlized onions and havarti cheese - YUM.

We're doing the portabello mushroom "burgers" from the March CL tonight. I'll let you know how it goes!
Otherwise, I have a great recipe for grilled criminis, which are basically baby portabellos. I'm betting the marinade will work equally well for portabellos, with possibly a longer marinating time.

Kim- I've done mine the same way. I've brushed some marinade on them, and then when I turned them over, put some various cheeses on it, and they were great.

Try the Grilled Vegetables with Balsamic Vinaigrette recipe on the CL recipe finder. We had it recently and it was delicious. I put the marinade together in the morning and let the mushrooms marinate all day while I was at work, then grilled for dinner that evening.

Made these the other night when the kids were having burgers. DH and I thought they were great. I only marinated about 45 minutes but the flavors were still really good. I also topped them w/pan-fried onions. YUM

These were a hit! Very zippy marinade. (of course, I left them in the bag for 48 hours 'cause our plans went awry on Monday)
A caution: I love the flavor of balsamic vinegar, so these were perfect for me. But...if you find balsamic vinegar too strong, you probably won't care for these.
Also, I'm a big fan of carmelized onions, and I found the recipe a bit stingy on these. In the future, I'm doubling the amount of carmelized onions. Yum!
