I have a whole lot of fresh dill sitting around (bought it for a potato salad). Any ideas of what I can do with it before it goes bad? Namely vegetarian ideas?

Cucumber salad is always good! Or mix it with sour cream for baked potatoes.

You could make a loaf of dill bread and freeze it for later if you choose.

Dill dip with crackers or Hawaiian bread is very good to serve at a potluck or as an appetizer for guests.

I did a search for recipes using dill and found several. You might want to do that yourself to see if anything sounds good. http://www.cookinglight.com/bbs/smile.gif

The Moosewood Cooks at Home cookbook has an excellent recipe for a Mediterannean Rice Pilaf that calls for fresh dill. It also has spinach, peas, feta, onions, garlic, rice (obviously). I am at work right now and don't have the recipe in front of me, but I will post it tomorrow. This is such a good recipe.

salsera: Hi love your username hope you enjoy salsa music! About dill when I have excess I just dry it and use it in potato, fish recipes. I also use dill in potato salad, chicken salad and devil eggs.

Salsera - If you scroll down toward the bottom of this page, you'll see a posting from Emilycat for "Lunch Salads for Kim". In there is a recipe for Black Bean, Corn and Red Pepper Salad. This uses a fair amount of dill and is very tasty. I used the leftovers to make quesadillas with some sharp cheddar cheese and it tasted yummy warmed as well.

you CAN freeze it. I do it all the time. I take it from my garden in the summer for winter use. If I run out in the winter I buy it and freeze it. It works out wonderfully and it is so simple.

One of my favorite dishes is boiled cut up pieces of potato, tossed with butter, garlic and dill. Yummy, comfort food!

I love it in chicken salad.
I mix it in with mayo for sandwiches (like turkey sandwiches).
I used it in place of rosemary in the rosemary potatoes recipe (it was in CL a few months ago -- potatoes were roasted in the microwave). Yummy!

Here is the recipe I was talking about from Moosewood. It is called Greek Rice Pilaf. I love this dish.

1 large onion (1 1/2 cups)
2 tablespoons olive oil
1-2 garlic cloves, minced (I always use two)
1 tablespoon dried mint
1/8 teaspoon ground pepper
1 10 oz. pkg frozen spinach - thawed (I think the original recipe called for fresh spinach chopped, but I use the frozen)
3 tablespoons fresh lemon juice
4 cups cooked rice
1 10 oz. package frozen peas
2 tablespoons fresh dill
1 8 oz. package feta cheese

In a heavy skillet, saute the onions in the oil on medium heat for about 5 min. until the onions begin to soften. Add the garlic, mint, and pepper continue to saute for 2 minutes. Stir in the spinach, lemon juice, peas, and rice. Add the dill. Cover and cook for 3-4 minutes, stirring. When spinach is limp and rice is hot, top with the feta and serve immediately.

I really like this rice dish.
