Here are some tasty marinade recipes I have collected...there are several here, but I had to type them up to enter into Mastercook anyway. Hope you find some of them to your liking!

Adobo (Mexican Smoked Chile Marinade)

3 oranges
1 lime
2 canned chipotle chilies or to taste
3 cloves garlic, minced (1 Tablespoon)
2 teaspoons dried oregano
1/2 teaspoon cumin seed
1/2 teaspoon black pepper
2 tablespoons wine vinegar
1/2 teaspoon salt

Juice the oranges and lime. Finely chop chilies and garlic. Place citrus juices, chilies, garlic, oregano, cumin, black pepper, vinegar and salt in blender and puree until smooth. Makes enough marinade for 1 1/2 to 2 pounds meat or chicken.

Beef Kabob Marinade

2/3 cup oil
1/2 cup lemon juice
2 Tablespoons Lawry's Seasoned Salt
1/4 cup catsup
1/2 teaspoon pepper
1 clove garlic, minced
Dash of Tabasco

Mix well. Marinade 1-2 pounds good quality beef, cut in cubes for at least 4 hours. Skewer with whole new potatoes, cubed green and red peppers, and onions. Grill and baste with marinade.

Rancho San Antonio Beef Marinade

1 cup white vinegar
5 cups tomato juice
1 cup brown sugar, packed
1 1/2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1/2 teaspoon red pepper
1/2 cup water

Combine ingredients. Marinade 4-5 pounds beef in mixture in shallow pan in refrigerator 3-4 hours before barbecuing, turning occasionally to coat meat with marinade. Do not shake off liquid before cooking.

Southwestern Marinade

1/3 cup lime juice
1/3 cup olive oil
2 tablespoons tequila
2 tablespoons chopped fresh cilantro
1 clove garlic, minced
1 small jalapeno pepper, chopped
1/4 teaspoon salt
1/4 teaspoon pepper

Combine all ingredients. Pour over peeled jumbo shrimp or soft-shelled crab and refrigerate 2 hours before grilling. Brush marinade on while grilling.

Pork Marinade

1/4 cup orange juice
1/4 cup vegetable oil
2 Tablespoons soy sauce
2 cloves garlic, minced
1/4 teaspoon cayenne pepper

In a small bowl, combine ingredients. Place pork in resealable plastic bag. Add marinade; reseal bag. Shake to coat. Marinate in refrigerator 2 to 24 hours. Drain marinade and grill pork until done.

Beef Marinade #1

1/4 cup olive oil
2 Tablespoons Dijon mustard
2 Tablespoons red wine vinegar
2 Tablespoons Worcestershire sauce
2 garlic cloves, minced
1/4 teaspoon black pepper

In a small bowl, combine ingredients. Place bef in resealable plastic bag. Add marinade; reseal bag. Shake to coat. Marinate in refrigerator 2 to 24 hours. Drain marinade and grill meat till done.

Beef Marinade #2

1 cup salad oil
3/4 cup soy sauce
1/2 cup lemon juice
4 tablespoons Worcestershire sauce
4 tablespoons prepared mustard
1 tablespoon pepper
2 cloves garlic, crushed

Mix all ingredients together. Marinate beef. Reserve and use to bast meat while grilling.

Korean Marinade

1 tablespoon sesame oil
1/2 cup soy sauce
1 tablespoon vinegar
2 cloves garlic, minced
cayenne pepper, to taste
2 tablespoons sesame seeds, crushed

Mix together well. Can be used with any meat. Marinate at least 1 hour. Makes about 3/4 cup.

Asian Marinade (for fish)

1/4 cup soy sauce or tamari
2 tablespoons dark sesame oil
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 tablespoon minced ginger
1 scallion, sliced thin (about 2 tablespoons)
ground black pepper to taste

Marinate fish for 30 minutes, turning after 15 minutes. Then grill for about 8 minutes.

Lemon Soy Marinade

3 tablespoons soy sauce
1 tablespoon ginger, fresh, or:
1 garlic clove minced
1/4 cup lemon juice
1/4 teaspoon ginger, ground

Combine all ingredients. Add meat and chil from 1 hour to overnight. Makes enough for about one pound of meat.

Lemon Pepper Marinade

1/4 cup lemon juice
1 tablespoon oil
1/2 teaspoon black peppercorns, cracked
1/4 cup water
1/2 teaspoon dill, fresh
1/2 teaspoon salt

Combine all ingredients, makes 1/2 cup.

Lemon Marinade (Chicken or Turkey)

1/2 cup lemon juice
1/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1/4 cup vegetable oil
1 clove garlic, minced
1/2 teaspoon thyme leaves
4 teaspoons finely chopped onion

Mix all ingredients in jar and shake well. Marinate chicken or turkey parts 4-8 hours. Use marinade to baste meat while grilling. Will marinate 2 1/2-3 pounds of poultry.

Lime-Ginger Marinade

6 tablespoons lime juice
3 tablespoons honey
2 tablespoons rice wine vinegar
2 tablespoons olive oil
1 1/2 teaspoons chopped cilantro
1 teaspoon grated ginger root
1/4 teaspoon red pepper flakes

Whisk all ingredients until combined.

Wow, Deanna--thanks so much for these. I'm always looking for new marinades, especially for beef. And anything that helps me use up my chipotles is alright with me!

WOW is right!! Thanks again Deanna. BTW, are there other websites besides ethnicgrocer.com that have chipotles? I have searched Tallahassee high and low, and haven't found a grocery store yet that carries them. So I went to ethnicgrocer.com and they are back-ordered, so I can't even order any for at least another 10-14 days. I am dying to try that BBQ sauce with the chipotles, if i could ever get a hold of a can!!!!!

I got them at mohottamobetta.com. Actually I got their phone number from the site and called them to order the chipotles. Good luck.

This is our favorite grilling marinade. Its my grandmother's recipe and was acutally featured on Coooking Live with Sara Moulton on the Food Network on 6/26/00. Its great on Chicken and vegetables (mushrooms, red, yellow, green bell peppers, onions etc.) and absolutely heavenly on shrimp.

Honey BBQ Sauce
1/4 C. melted margarine
1/3 C. cider vinegar
1/3 C. honey
2 cloves garlic, minced
1/2 t. dry mustard
1 t. salt
1/2 t marjoram
dash of pepper.

Mix all ingredients and brush on meat and vegetables. I suggest letting the chicken marinate for at least a couple hours, the others don't need to marinate as long.
