Someone was talking about these today and i did a search for them on Yahoo and could not find them anywhere!!! Who ever put the posting up said they were all over the internet. Could you PLEASE post them? Thanks a million!!

Michael's Fudge Brownies

1 teaspoon instant espresso coffee granules
1 teaspoon hot water
1 1/4 cups sugar
5 tablespoons butter or margarine -- melted
1 teaspoon vanilla extract
2 egg whites -- lightly beaten
1 egg -- lightly beaten
1 cup all-purpose flour
1/2 cup Dutch process cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
Vegetable cooking spray
Combine coffee granules and hot water in a large bowl; stir well. Add sugar, butter, vanilla, egg whites, and egg; stir with a wire whisk until well-blended.
Combine flour, cocoa, salt, and baking powder; stir well. Add flour mixture to coffee mixture, and stir until well-blended. Spread batter into an 8-inch square baking pan coated with cooking spray. Bake at 350 degrees for 25 minutes; let cool in pan.

Mindy, You are so very welcome. I was so excited I had the recipe available to me thru Mastercook and that I had actually learned how to export the recipes from some very talented people here on the BB.

I printed this recipe out ages ago and I just made them last night. The only change I made in the recipe was I used just regular instant coffee rather than the Espresso kind.
I took them out of the oven and when they weren't tongue scalding hot http://www.cookinglight.com/bbs/biggrin.gif I dug right in. I was quite honestly disappointed. They were kind of dry and not that fudgey tasting.
I covered them with plastic wrap and thought I wouldn't make them again.
However........ I got home from work today and HAD to try them again, THIS TIME, THEY WERE GREAT. Fudgy and everything!!!!! I guess I should have waited until they were completly cooled.
I would make them again, this time allowing them to sit for a couple of hours before I dig in!

It's important with this receipe not to overbake them. This has been my favorite brownie recipe for years and I like to underbake them slightly for a fudgier results. These are great topped with light vanilla ice cream!

My mother is CRAZY about these brownies. She eats two every single day and has never found a dessert she liked better. I make them for her every week, and I reduce the sugar to 3/4 cup. She likes them that way as she does all chocolate. I have been making this recipe for so long, I have memorized it and could make them blindfolded! I enjoy baking for other people more than for myself since I can eat hardly anything with my digestive problems.

If you like this recipe, you might like Alice Medrich's book "Chocolate and the Art of Lowfat Baking". She's the author of Michael's Fudge Brownies. I've made several desserts from this cookbook (including a wonderful cheesecake recipe) and have never been dissapointed.
