Made this last night and it was very, very tasty! Got great reviews from all the guys! Served it with the Roasted Broccoli someone posted awhile back (it was wonderful, I did omit the butter) and a loaf of Asiago Cheese Bread. I used boneless thighs because I find bone-in to be too much trouble to eat. I had thought about making some brown rice with it and got distracted but the bread did a fine job soaking up the sauce!

Do you really need the molasses? I am not crazy about molasses.

You must have this confused with some other recipe. There isn't any molasses in it.

i made this last night and it was delicious. i used the boneless, skinless thighs and we grilled them on the bbq instead of baking them. these would be excellent cut in strips for tacos, or a mexican salad. excellent flavors!

Made these the other night,but with chicken breasts....They were a little bit dry, I guess the thighs may have been better, but the flavor of the sauce is great!!!

I have some leg-thigh quarters. Is there any reason the recipe wouldn't work with these?

joyce, i think the leg quarters would work fine...you may need to make more of the marinade though. if you can, i would grill them, instead of baking. they were delicious!

I'm intrigued by the fact that you cooked them on the grill and used the sauce as a marinade. How long did you marinate? Did you start them on the stove in the sauce as the recipe calls for?

sneezles, this is what i did: prepared the dry ingredients (garlic, cumin, oregano, a bit of the lime juice, etc.) and put the thighs in (i used 6 boneless, skinless thighs). sort of was like a dry rub. then i combined the broth, vinegar, lime juice mixture and poured a bit over the chicken. i marinated at room temp for about 10-15 minutes. hubby went to the grill, and i specifically asked him to save the marinade for me (he knows otherwise to throw it out). then i combined the leftover marinade with the rest of the broth/vinegar mixture and boiled it in a saucepan until it was saucy. i spooned the sauce over the grilled chicken. i improvised and i never put it on the stove. i also think this marinade would be good with any chicken pieces (maybe except breasts, as they just don't seem to absorb any flavors to me).

i am not quite sure why these were so good! perhaps it was the thighs, i don't know, but we loved it. i cubed the leftover chicken and made a mexican salad with corns, beans, lettuce, cilantro, etc. it was so good. let me know if you try them grilled. enjoy!

Made these for dinner tonight and used bone-in chicken thighs. They were fantastic! Great sauce and very tender. That article on chicken thighs in the May issue sure has some excellent recipes in it!!

I made these for dinner last night as well. I had to have the bone in the thighs because of time. I also grilled them after marinating them for about 20 minutes (time again). Instead of chicken broth I used some white wine and added 1/2 a jalapenio. Yummy!!! Served with a nice mixed salad and sauteed potatoes and a bottle of white wine from Argentina. Two thumbs up for this one and no stove/oven needed.

WOW!!! Made this last night and this is a DEFINITE REPEATER!!! Yummmmmy!

Husband and I both raved and I am soo glad I doubled the recipe because he inhaled it!

I also did the dry rub thing as recommended and increased the garlic a bit http://www.cookinglight.com/bbs/wink.gif I served it on top of the herbed basmati rice and steamed broccoli..yee haa it was good. It would be a great marinade for fajitas to be served with a black bean salsa too!

Yum..raves from me and a definite repeater despite the 7pts! Worth it http://www.cookinglight.com/bbs/smile.gif

This recipe was SUPERB!! We loved the sauce. I used boneless thighs because my husband hates dealing with bones.

made these yesterday for lunch. i found them to be very garlicky. which is not a bad thing.. I prepared these in my iron skillet so i could just pop them in the oven safely. I did not get all that much sauce, i even had to add more chicken broth to get a substantial amt. I loved the flavor of the chicken though. i served these with a baked potato. it was just me so that was enough. i put the other 2 thighs in the freezer for a quick dinner later in the week. i hope they freeze good.

I made this last night for dinner and would rate it a "10"!!! This was so delicious. I would defintely make this for company!!!

I made this last night, with boneless/skinless thighs, and it was awesome. Definately one of the best recipes I have ever made.

I had some left over pasta, so that's what I served it over, and it was fabulous. My mother-in-law came over a couple of hours later and said that the house smalled great. I gave her some of the chicken, and she loved it too. This is definately a repeater.

I have to say, that if it wasn't for the BB, I would never have made anything from the May issue. I'm glad I'm addicted http://www.cookinglight.com/bbs/biggrin.gif

I made these last night, and we really liked them. Very flavorful. I used boneless/skinless thighs, turned out beautiful after 30 minutes in the oven. I bet they would've been even better had I remembered to add the cilantro at the end http://www.cookinglight.com/bbs/redface.gif I served them with rice and a corn dish. Very excellent, I will be making this again.

I made these last night b/c of the rave reviews - really yummy! I used chx breasts b/c that's what I had on hand. My sauce never really got thick - so I ended up cooking egg noodles in it to serve the chicken over. It turned out really well. I will definitely make it again.

I left this recipe out with the intention of making it later in the week. Instead, my husband made it before I came home. He said it was so easy. He used boneless skinless chicken thighs.

The sauce was excellent. We'll be making this again soon.

Gotta add my review for this one!

I made these last night, and we gave them an 8. Really, really, good, and easy. I used my cast iron skillet too, and I doubled the recipe (my husband likes leftovers for lunch). The whole house smelled sooooo good while these cooked, and my sauce cooked down perfectly. The meat was so tender and flavorful. I will make these again for sure!

Made these tonight - YUMMMMMMY.

I had a whole chicken, so I cut it up into pieces and skinned but did not bone. Cooked it a little longer. Doubled the marinade and sauce ingredients.

Definitely a keeper.

Everyone was right! I made this tonight and we thought it was fantastic! I don't rate my recipes, but if I did, I just might give this one a "10". I served it with plain basmati rice, grilled asparagus, and sourdough french bread. Mmmm! I will definitely make this one again.
I forgot to mention that I didn't have plain vinegar, so I used cider vinegar and it worked great.

BF and I made this over the weekend and absolutely loved it! We think that this is one of the best of 2001 so far! I served it with a salad of romaine, tomato, avocado, Mexican cheese, and olives and Trader Joe's Basmati/wild rice medley.

Definitely a keeper and next time we will double it!

I just made this too and it was great. The meat was incredibly tender. The house still smells good, even the next day!

Sorry to bring up an old(er) thread but the Chicken Thighs with Garlic and Lime was absolutely delicious (as everyone else already said!). I wish I would have doubled the recipe. Didn't think my son would like it so I was going to bring some to work for my boss for lunch (we do this back and forth when we try different CL recipes). Well, just before I was going to make up a container for her, my son came home and immediately ate one thigh right out of the tupperware container :o THEN started on another all the while saying how good it was :D . Oh, it gets better, he decides to bring another one to work for his lunch (not the one he had partially eaten mind you :rolleyes: !). So, there went the 4 thighs!

I served it over couscous with petite peas which tasted even better with the garlic/lime sauce. YUM! .... just wish I had some leftovers!
