I posted one of my favorite (Black Bean Salsa) under the Tex-Mex Bean dip thread, but here are some others...fruit salsas.

Citrus Salsa

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 large oranges -- peeled and chopped
1 large grapefruit -- peeled and chopped
2 medium tomatoes -- peeled and chopped
2 Tablespoons lime juice
2 Tablespoons orange juice
1/4 cup cilantro -- chopped
1 teaspoon sugar
salt and pepper

Combine all ingredients in bowl and mix well. Salt and pepper to taste.

Yield:
"3 cups"

Melon Salsa

1/2 honeydew melon -- finely chopped
1/2 cantaloupe -- finely chopped
1 jalepeno -- finely chopped
2 Tablespoons fresh lime juice
1 Tablespoon olive oil
2 T. fresh mint leaves -- minced
1/4 teaspoon salt -- (optional)
1/4 teaspoon freshly ground black pepper

Combine all ingredients in a medium size bowl. Cover and chill one hour or up to one day.

Watermelon Pico de Gallo

1 1/2 cups watermelon -- seeded and diced
1/2 cup chopped fresh cilantro
1/2 cup jicama -- peeled and diced
1/4 cup cantaloupe -- diced
1/4 cup honeydew melon -- diced
2 T. purple onion -- finely chopped
1 T. or more jalapeno -- finely chopped
2 T. fresh lime juice
2 T maple syrup -- (or to taste)
1/4 teaspoon salt

Combine all ingredients in a bowl and stir well. Sweetness of melons may require adjustment of maple syrup.

Yield:
"3 cups"

I double checked the citrus salsa recipe, and it doesn't call for any chilies, but you could always add a jalapeno or some crushed red chilies, whatever heat you prefer, if you prefer.

and here is a mango salsa...
2 mangos peeled & diced
1 c pineapple diced
1/2 c fresh cilantro chopped
1 jalapeņo finely chopped
1 lime
1 tab honey
1/4 c olive oil
1/2 c red bell pepper chopped
Combine all ing and refrigerate for flavors to blend. Serves 8
110 calories per serving

What would you serve these with? Fish? I have very ripe pineapple to be used..I will hit the store for mango!

You can serve peach salsa with pork loin
mango salsa or a tomato salsa would go nicely with fish and yes chips would probably go with all salsas
ops I mentioned peach salsa might as well give you the recipe
C Light peach salsa
3 1/2 c diced peeled peaches
1/4 c red onion diced
2 tab fresh cilantro chpped
1 tab seeded minced jalapeņo
2 tab rice vinegar
1 tsp lemon juice
1 garlic clove minced
Combine all ing, cover and chill. Serve with pork tenderloin Yields :3 1/2 c

I have had the fruit salsas mostly with fish, but they could go with just about any grilled or roasted meat, especially with a little chili rub or some lemon or lime juice.

I think I either had or have seen a pineapple salsa that is along the same lines as these. If anyone has a recipe, please post.

Pineapple Salsa

1 cup very ripe peeled,cored and diced pineapple
2 teaspoons dark brown sugar
1 teaspoon unseasoned rice vinegar
2 serrano peppers -- minced
1/4 cup finely chopped sweet red pepper
juice of 1 lime
1 tablespoon finely minced cilantro

Mix all ingredients together. Taste and add more lime and chiles as needed.

Yield: "2 cups"

Per serving: 122 Calories (kcal); 1g Total Fat; (5% calories from fat); 1g Protein; 31g Carbohydrate; 0mg Cholesterol; 7mg Sodium

NOTES : This doesn't keep well uncooked. If making ahead of time, mix all ingredients together except the lime and cilantro. Bring to a boil and simmer 20 minutes. Cool and add lime juice and cilantro. Serve at room temperature.

***2 canned chipotle chiles in adobo sauce can be used in place of the serranos, if desired.***

Thanks. That sounds like what I remembered. I also found another pineapple salsa -- 1 small pineapple (cut in half and the fruit remove to create serving shells if you like), 1 med. red oinion chopped, 3/4 cup fresh chopped cilantro (sound like overkill to me), 1 T. white wine vinegar, and 1/2 tsp hot pepper sauce. The one you had sounds fresher and better looking.

I tried your recipe for the melon salsa and it was wonderful. Went great as a side for grilled steak. I added some blueberries for a second serving - yummy. I'm just not sure how this recipe gets to be 455 calories a serving - is that some kind of computer error? How big is the serving size?

Ellie, I like the idea of adding blueberries. actually, you can keep throwing fruits together and I'm usually happy.

I noticed the calorie count, and that seemed high even for the whole recipe. I haven't really learned how to input the ingredients so MasterCook recognizes all of them. I noticed in one recipe that it assume a couple of Tbsp butter was one whole, whatever that is. A pound? Basically, I dunno. Glad you liked it.
