when we grill corn we rub on lots of butter and sprinkle with lemon pepper, mrs. dash, and regular pepper then wrap tightly in foil. grill it about 20 minutes (time it would take chicken breast to cook) turning often. very yummy!

It's just like when you boil them, they turn a golden yellow and in some places they are a bit charred (but oh so delicious!).

The July 00 issue of CL had a couple recipes for grilled corn on the cob. The article was "Corn to be wild". I didn't try any of these but they sound good. Let us know how it turns out if you make any of them!

I've never done this before and was wondering how long it takes? I've heard that it takes a while. Is there a way to shorten the time by maybe pre-boiling the corn, and then grilling? I heard Emeril say that you can shuck the corn then wrap in foil with butter, salt and pepper then put on the grill. How long would that take? Any tips you can offer would be great. Thanks!

We like to do it with the shucks on, it gives a better flavor. It takes about 15-20 minutes depending on your fire.
Here's a recipe from Epicurious:

GRILLED CORN ON THE COB


Can be prepared in 45 minutes or less.
8 ears corn in husks, outer layer of husks discarded or torn into strips for tying corn

Prepare grill.

Peel back corn husks carefully, without breaking off, and discard silks. Fold husks back into place and tie ends together with strips of outer husk or kitchen string. In large bowls cover corn with cold water and soak 10 minutes. Drain corn and grill on a rack set 5 to 6 inches over glowing coals, turning occasionally, 15 minutes.

Serves 4.

I've done this a few different ways, all good!

First, go over to www.weber.com (http://www.weber.com) (The Weber BBQ people). There are some handy ideas as well as this "recipe":

Grilled Corn on the Cob

4 ears sweet corn in husks, silk trimmed

Place corn in deep container, cover with cold water and soak at least 1 hour. Remove corn from water; shake to remove excess water.

Place corn on center of cooking grate. Grill 25 to 30 minutes, turning 3 times. Use gloves to remove husks and silk before serving.

Makes 4 servings.

(It says to use indirect heat on a charcoal grill & indirect/medium on gas; I've ALWAYS use direct heat w/charcoal & it's turned out fine.)

Second, if you have the July, 2000, issue of CL, page 95 has some great rubs for grilled corn, including cajun, jerk, & north African. I don't know if any of these are at CLs Recipe Finder, though. Each recommend pulling the husks back, brushing with melted butter, rubbing on the spice mix, then grilling for 12 minutes or so.

I've always grilled corn after pulling back or removing the husks, so I can't comment on wrapping in foil or grilling with husks on. Maybe www.foodtv.com (http://www.foodtv.com) has Emeril's recipe....

Thanks for everyone's help. We did buddie's idea last night. I liked the idea of pre-buttering the cob, and then we just wrapped in foil and tossed on the grill. It was very tasty! Thanks everyone! http://www.cookinglight.com/bbs/biggrin.gif

Try this: Shuck the corn, place on bbq
(naked) brush with garlic butter, turn a few times and brush more garlic butter. When the corn looks a little brown speckled and delicious it is done. It takes a few minutes, put on the side of the meat you are cooking for the last 10 minutes. We use white corn. You know, you can eat the white corn raw, it is so sweet and delicious.
All these complicated corn recipes are not necessary if the corn is fresh!

Here is one for you. Friends of ours do this all the time - it is incredible!! Remove hudks fro mcorn and soak in coconut milk (ideally over night) - then grill directly on grill. YUMMMY and Easy!

Hi Mandy,

Last summer Cooks Illustrated ran an article about grilling corn. They recommend shucking the corn down to the last layer and leaving one layer of husk on. Also remove the silk.

Then put it on the grill over medium flame or heat and grill until the husks are somewhat charred all around. The corn inside may be very slightly charred in places. This works very well! And it is sooo easy. It takes 2-3 minutes on each "side". About 3 turns seem to do it.

I just grilled white corn on the cob this weekend and the recipe was from a Gas Grill cookbook that said just leave silk and husk on and grill directly and silk peels right off. And it did. do not soak it says or can make corn tough. I made a lime chile butter to put on it and was loved by all.
