Review: Green and Yellow Bean Salad with Chunky Tomato Dressing and Feta Cheese

Fresh green beans with a fresh tomato topping with delicious sheep feta....poetry on a plate. I highly recommend this! We had it with crust parmesan bread with goat cheese and white wine. Perfect summer dinner!

We liked this one also. I think the fresh basil really makes the salad. I couldn't find fresh wax beans, so I used a can and thought it tasted great! Will be making this again this summer!

The wax beans were EXPENSIVE!, so I only used a minimum for color!

OOOOOoohhh - this one stuck out at me like a flashing neon sign when I first got my June issue! I keep looking for fresh wax beans, and haven't found good ones yet, but I think I'll do what Peggy did and use canned (if you liked it, I WILL!! http://www.cookinglight.com/bbs/biggrin.gif)

I thought this recipe looked awesome - except for the feta. I wonder if another cheese would work as well - maybe bleu - what do you think? I like feta, but in VERY small amounts. It's probably my least tolerable cheese.

I think a small amount of bleu would work, the trick will to be not to overpower all the other great flavors with the cheese.
