Very moist with generous serving size. It was an excellent way to use up some very ripe strawberries. The recipe called for mashed strawberries in the batter so mine were just perfect. The recipe did call for black pepper which i found odd. I did add my 1/8 tsp. I could not taste it at all. I do think that i overmixed my cream cheese frosting though as it was not as fluffy as i had hoped for. This made a wonderful summer birthday cake for a friend.

Would this be good with a plain powdered-sugar icing? I am not a fan of cream cheese frosting on most things, but the cake sounds good.

Do you think you could use frozen strawberries for this recipe???? I have a bunch that I froze last month when they were in season in are area.

Strawberry spice cake with cream cheese frosting
1 1/2 cups sugar
1/4 cup soft butter or margarine
2 lg eggs
1 egg white
2 1/4 cup all purpose flour
3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1/8 tsp ground black pepper
1/8 tsp cloves
3/4 cup chopped strawberries
3/4 cup low fat buttermilk
1 1/2 tsp vanilla
cooking spray
Cream Cheese Frosting
2 cups sliced strawberries
1. preheat oven to 350 degrees
2. beat the sugar and the butter with a mixer till well blended. Add the eggs and egg white one at a time, beating well after each addition. lightly spoon flour into dry measuring cups and level. Combine flour and next 6 ingredients (flour through cloves) in a medium bowl. Mash chopped strawberries with a potato masher and combine mashed strawberries,buttermilk and vanilla. Add the flour mixture to the sugar mixture alternately with the strawberry mixture beginning and ending with the flour mixture. pour the batter into a 13 x 9 baking pan coated with cooking spray. Bake at 350 for 30 min. then cool cake in pan on wire rack.
3. Spread the cooled cake with the cream cheese frosting, arrange sliced strawberries over top of cake. store loosely covered in the fridge.
Makes 16 servings
Cream Cheese frosting
2 tsp soft butter or margarine
4 oz. chilled fat free cream cheese
1/4 tsp vanilla
1/4 tsp lemon juice
3 cups sifted powdered sugar
1. combine first 4 ingredients in a large bowl and beat at high speed of a mixer till fluffy. add powdered sugar, beat at low speed till just blended. (do not overbeat)

i really think that this cake would have been great with just a dusting of powdered sugar instead of the frosting.
Kathy, I dont see a problem with using prev. frozen strawberries in the batter.
i hope you all enjoy it if you make it. This is a cooking light recipe from June 1998.

What a coincidence - I just made this last weekend myself, having made it once before when the issue first came out.
Just my 2 cents - my Dad HATES cream cheese, so to take it to his house, I used ultra low fat cool whip. I also up the black pepper to 1/4 tsp. Everyone loved it.
Except when my kids found out the next day that there were no more strawberries for their cereal!

I was wondering, do you think this recipe would work for cupcakes. I have a thing to go to in July and they want me to bring something lowfat and tasty. There will be fifty people there. A mid morning get together. Cupcakes would be easy. Do you think it would work??
