View Full Version : ISO frosting for Died-and-Went-to-Heaven Chocolate Cake

My stepfather-in-law (that sure is a mouthful) is having his 65th birthday party tonight and I volunteered to make a cake. He always is impressed with my low fat baking (and I always give CL full credit http://www.cookinglight.com/bbs/smile.gif ), so I am going to make the DAWTH cake. I am looking for a good low fat frosting. It needs to be the thick kind (apparently, I am not coordinated enough to drizzle!). Also, since I do not have a candy thermometer, it can't require any of that fun temperature taking process. Thanks so much!

Here's an icing that I used to love before I developed lactose intolerance. I don't know if it's really "light" but it's not really "heavy" either. Best of luck!
Chocolate Cream Cheese Frosting
Makes 3 cups (approx.)
Ingredients
1 (8 ounce) package cream cheese
1/4 cup confectioners' sugar
1/4 cup heavy whipping cream
1 cup semisweet chocolate chips
Directions
In double boiler melt chips and add heavy cream, mix until smooth take off of heat.
In mixing bowl cream together sugar and cream cheese until smooth, slowly add chocolate mixture. Mixture will thicken up as the chocolate cools.
Calories 80, Protein 1g, Total Fat 6g Sodium 29mg, Cholesterol 14mg, Carbohydrates 6g, Fiber 0g

1 tub light cream cheese -- (4 ounces) softened
3 tablespoons skim milk
3 squares semisweet chocolate -- (1-ounce) melted
3 cups sifted powdered sugar
1/4 cup unsweetened cocoa
1 teaspoon vanilla extract
(You don't want to make this frosting ahead of time because it will dry out.)
1. Beat cheese and milk at high speed of a mixer until creamy. Add melted
chocolate, and beat until well-blended.
2. Combine sugar and cocoa; gradually add sugar mixture to cheese mixture,
beating at low speed until well-blended. Add vanilla; beat well for 1 minute
until very creamy. Yield: 1-3/4 cups.

Mexican Chocolate Frosting

1 tb butter -- melted
3 tbs. fat free milk
1/4 cup granulated sugar
1 oz unsweetened chocolate -- chopped
1 3/4 c powdered sugar
1 tsp Mexican vanilla
1/2 tsp cinnamon
Melt butter over low heat in small, heavy saucepan. Add next 3 ingredients, cook until chocolate melts. Remove from heat and cool. Stir in powdered sugar,vanilla, and cinnamon. Spread over cake.

As far as the cinnamon goes, I have no idea how much I put in. I based the whole thing on my hot chocolate recipe, which I never measure either. I just dump some in until it tastes good. My guess is 1/2 tsp. I made the cake in 2 9in pans, and I needed to double this recipe. Anyway, it's insanely good.

Do you need the frosting because he really likes frosting? It think that the cake is just fine as it is with the drizzle on top!

Mamasue-Thanks so much for the recipes. Unfortunately, I just got around to checking posts, so I used another frosting recipe. The post is printing as we speak so I will try your frosting suggestions.

m4star-your recipe looks delicious. I wanted to stick with something a little lighter, but your chocolate cream cheese idea really peaked my interest. Anyway, I found this recipe on the CL page...
1/2 block 1/3 less fat cream cheese
2 tbs stick margarine, softened
3 tbs skim milk
3 1/3 c sifted powdered sugar
3/4 c unsweetened cocoa
1/8 tsp salt
1 tsp. vanilla extract
Beat first 3 ingredients in a large bowl at high speed if a mixer until smooth. Combine sugar, cocoa, and salt; fradually add sugar mixture to cheese mixture, beating at low speed until well-blended. Add vanilla, and beat well. Cover and chill.
