Made the Quick Chili Con Carne last night (from the section on meals in 30 minutes or less). It was really delicious, and very easy to prepare. Warning, though -- it is very spicy. The recipe called for 2 tablespoons of red pepper! So, if you didn't care for spicy food, you'd have to adjust that considerably.

I found a BIG TIME KEEPER recipe in the June
issue. It's the Peanut-Butter Chocolate Chip Brownies. Have made them 4 times since and many people at different events have LOVED them. They do not believe they are from a "light" recipe.

I made the Ginger Peanut Chicken Wraps last night from this issue and really liked it!!! I would suggest cutting the chicken into strips before cooking though, it cuts down on time and messiness!

I tried the Glazed Lavender Cake and thought it was excellent. It had a very subtle flavor of lavender and the texture was very soft and moist. It was especially good with frozen yogurt on it. I used a perennial lavender rather than the French lavender that was in the recipe and it was fine.

I have really enjoyed the June Issue! The following is my feedback on some of the recipes.
Desserts: The Raspbery-Cream Cheese Brownies were outstanding! Very flavorful and moist. We also enjoyed the Spicy Melon Salad. I used cantalope and watermelon.
Fish: Both the Broiled Salmon over Parmesan Grits (I BBQed the salmon) and the Spicy Herb-Grilled Salmon Steaks were very good.
Meatless Main Dishes: I liked the Mushroom-Spinach Quiche in an Oat Crust. I used egg substitute for all of the eggs/egg whites and it turned out just fine.
Meats: My family liked the Beef and Chicken Fajitas but I had lots of leftover onions and peppers. Probably could have used half of the amount in the recipe. We also liked the Ginger-Peanut Chicken Salad Wraps. The Grilled Split Chicken with Rosemary and Garlic was super moist and delicious. I was not impressed by the Herb-Oat Crusted Chicken. I felt it was very bland. I ended up slicing up the left overs and putting them in a chicken salad the next day.
Salads: Couscous and Cucumber Salad with Buttermilk-Dill Dressing was good. It will be a very refreshing salad in the hot summer. We also liked the Fresh Mozzarella, Tomato and Basil Couscous Salad and the Marinated Tomato and Green Beans.
Vegetables: The Summer Squash and Corn Saute was excellent. Can't wait to make that one again.
Did anyone ever make any of the lavender recipes? I have a garden full of lavender but haven't got around to trying any.

I'm behind on my issues - just reviewed June and July over the weekend (at least I have an excuse - due with our first child in 12 days and cooking hasn't been top of mind ;-)

Did manage to make the Blueberry Almond Coffeecake and thought it was excellent. Fresh berries are so great this time of year - I put a bit more in than the recipe called for and it was yummy.

Looking forward to trying out some of the others you mention!

I made the Peanut Butter Chocolate Brownies for the 4th because of the raves on this board. And -- they were a big hit. My husband, who claims not to like "light" desserts, loved them. I'll probably make them again this weekend.
